Yesterday, I got to cater a unique event. A retirement party for MSgt Collins of the 628th Medical Group of the USAF. MSgt Collins is a Louisiana native and really wanted a taste of home. So, for my first time, we did a Louisiana Crab Boil. We also prepared Muffulettas (unfortunately, the bakery set us the wrong bread loaves but, whatever) and we did Cajun spiced hushpuppies which we fried in my cast iron dutch oven right there on the spot! Those bad boys were a HUGE hit!!
I think the most exciting thing for me was I finally got the chance to do something other than bbq!

Hey everyone! This post is basically for all of our new followers or anyone else who is having a hard time trying to navigate through Porky Pete's page. Facebook Business makes it really difficult for you to find anything. I even have a hard time finding things and I'm the one who created it, LOL! I feel like there should be just one page where I can showcase everything we sell with catering info, prices, how we do things, etc...
On our homepage, if you look under the red logo, you'll see the menu tab. Click that and all the photos will pop up. If you click on the photo the description and price will pop up. See how FB makes it difficult?
We can cater anything on the menu. But, we do have a set menu called "Big Event Catering". We use this menu for weddings, engagement parties, company luncheons, any event size that's 20 or more people. The price is $28 per person but that is just for a simple drop-off. In the description, it says that if you want us to set up buffet-style, where we come in and serve, set up our tables, tents, etc... that requires me to have to bring in a team and that is an additional $225 on top of the $28 per person. This requires half of the total cost being paid in advance to take that day off our calendar and hold that day for you. The deposit goes towards the food which we start purchasing a week prior to the event date. After the food has been bought, that money is NON-REFUNDABLE. We require the remainder of the money to be paid anytime before or on event day BEFORE we start setting up. Call me anytime for more details.
We can also custom-create any type of menu for you. We can even do breakfast for your company if you'd like. Just give me a call.

Please keep in mind that we are a catering company, not a restaurant. So, for our lunch menu, we don't keep anything on hand. We don't take orders on Thurs or Fri. We do this for companies like Joint Base Charleston, Boeing, The Charleston Port Authority, etc...basically anyone who doesn't have much time for a lunch break. Group orders work best. Doing it this way, we know what needs to be purchased, and your orders come right off the grill or right out of the smoker and we're there right at the start of your lunch break. Our deliveries run from 10:30am to 2pm.

We all have our favorite style or way of cooking outdoors, and it doesn't matter if you prefer propane, charcoal, or if you're a stick burner. What matters is that you're outdoors spending time with family and friends. Enjoying an ice-cold beer, jokes, and family stories. Nothing can beat that.
Depending on what I'm cooking or who I'm cooking for, I have no problem jumping around from charcoal, propane, or wood. This is just a quick video of some of my favorite outdoor cooking methods. What's your favorite outdoor method? Let us know in the comments!

Pork loin is cut to just over an inch and half-thickness and comes w/ whisky | bacon | onion jam and is stuffed w/ my homemade 3-cheese andouille sausage pimento cheese. We'll be holding off on our Thurs/Fri lunch deliveries for the next 3 weeks. We have 4 big catering jobs that we have to focus on. During this time, we'll be revamping our lunch menu to make it a little more "summer-friendly". I have some great ideas but, I'd like to hear from all of you. Farm-to-table is where it's at! The lovely group of veggies seen here is about to become our Potlikker Green Beans & Potatoes, which you can get as a side with any of our amazing barbecue. Happy Tuesday everyone! Hope all of you are having a fantastic day! We've been pumping out all kinds of orders these past 2 weeks and we've landed 3 catering jobs, all in May. If you have any big events coming up, indoor or outdoor, give us a call to get those dates off our books. We can accommodate up to 125ppl. With that being said, we do have a bit of bad news... this will be the last week of us selling our amazing bbq at such a low price. We thought that since we were so much smaller than the bigger bbq joints in the area that we'd be able to get away with these prices. Boy, were we wrong! This inflation thing is no joke and its devastating for small businesses! So, starting this Saturday, 4/30. our bbq prices will be going up. It still won't be as much as the other area bbq restaurants but going up none-the-less. Now, I'm not changing recipes. Our food flavor profiles will stay the same. If you haven't tried us yet, you'll see that we can easily give these bigger name places a run for their money. That won't change! We'll also be taking off the shrimp etouffee hoagie and the red beans and rice. New menu will be up Monday for all of your Thursday and Friday deliveries. Thank you for all of your support! And if you don't support me, then get out there and support another small business. It's rough out there!!

Sorry for the quality of the photo (my good camera broke) but, we are now using these amazing Challah buns from Saffron Café & Bakery (http://eatatsaffron.com/), located off E. Bay St. in downtown Charleston. They are light and sweet (similar to a Hawaiian roll) but dense enough to hold up to all the juicy goodness of our pulled pork and pork loin sandwiches, and they just look a heck of a lot better!!
Pictured here is our Bacon-wrapped pork loin sandwich. The loin is actually a pinwheel rolled up with our homemade smoked Andouille sausage 3-cheese pimento cheese, cut to an inch and a half thickness, seared on both sides in cast iron. We add more pimento cheese on top and on the bottom bun, you’ll find our whiskey | bacon | onion jam. We don’t play when it comes to food and flavor! Order this beast anytime for Thursday or Friday delivery!

Here is a pic of our Shrimp Etouffee Hoagie. Blackened shrimp seared and simmered in a classic Etouffee sauce w/ spicy tomatoes, mozzarella cheese and topped w/ a carrot-pepper slaw. Add 1 side, $14.
