Louisiana Shrimp Boil
Yesterday, I got to cater a unique event. A retirement party for MSgt Collins of the 628th Medical Group of the USAF. MSgt Collins is a Louisiana native and really wanted a taste of home. So, for my first time, we did a Louisiana Crab Boil. We also prepared Muffulettas (unfortunately, the bakery set us the wrong bread loaves but, whatever) and we did Cajun spiced hushpuppies which we fried in my cast iron dutch oven right there on the spot! Those bad boys were a HUGE hit!!
I think the most exciting thing for me was I finally got the chance to do something other than bbq!

Chuck beef burger marinated in Louisiana hot sauce then slow smoked over Apple wood. Topped w/ black pepper bacon and smoked gouda & x sharp cheddar cheese sauce. Cheese sauce was made in the same cast iron pan that I cooked the bacon in. Ooohhhhhh mama!!

I took the pork fatty w/ the charred veggie spinach dip and made a bbq sammie out of it. Just throwing some ideas out there for y'all.
And I'm still practicing on creating social media advertisements.
Just having fun with an app I downloaded. The hand claps at the end make me laugh every time.
This is one of the new recipes that I'm working on for the holidays; Porkloin rolled w/ Charred Veggie Spinach Dip.
Basically, you char the veggies you want to add right over hot coals. Make a spinach dip, fold the ingreadients in and then top the butterflied porkloin, leaving about a half inch border. Roll i it up. Then roll it up in weaved bacon.
I smoked this one for 4 hrs using apple wood.
Like i said, this is just practice. The spinach dip was fantastic , but could of used more cream cheese and I went a little heavy on the smoke. It was slightly bitter. But it sure did look pretty!
The pics I took after I cut into it came out to dark so, I didn't use them.
Again, this was all practice for the holidays. Not just cooking and procedure but, filming and editing for advertisements.

Getting one more practice run in with chicken quarters before Labor Day gets here, tweeking the recipes and smoke amount.
Customers can choose between Salt and Pepper (what we call plain), sweet & tangy bbq and spicy cajun dry rub. All lightly smoked with hickory.
Pictured here are plain white quarters, 1 sweet & tangy leg quarter and 1 spicy cajun dry rub leg quarter (we're having ours with buttered baby potatoes). For Labor Day we'll be serving them with seasoned green beans (simmered in veggie stock with smoked turkey necks) & 4-cheese Mac & Cheese.
