I’m lucky that what I do for work is my passion and I love what I do. Why go out to eat when the best restaurant in town is right here! Whole heritage breed pig deboned, stuffed with parsley, garlic, lemon, fennel pollen, fennel, olive oil.. slow roasted for hours over an open fire. When done this way and sliced it yields the most incredible experience giving a taste of each cut of this glorious pig.
