When you ask for a coursed dinner party for your 50th birthday party. A regular of mine in downtown Chicago wanted a special catered affair for 30 people, wine pairings cocktail hour servers the full experience!
One of my first dinner parties and for sure has been a top tier one for the memories!
Passed hors d'oeuvres:
ricotta gnocchi with ratatouille
Ahi Tuna Tartare on crispy wontons
Chilled yellow tomatoes soup with vanilla bean and crab
1st course:
Lamb tartare, kalamata olive tapenade, quail egg and artichoke chips
2nd course:
Pan seared Sturgeon, fresh pappardelle pasta creme fraiche caviar cream sauce with sea beans and fried parsnip ribbons (he loved crispy textures and things, you cant see the pasta cause the parsnips are literally a ball of 6 inches on top)
3rd course:
78 hour sous vide Waygu Zabaton(top meaty part of the short rib) crispy polenta batons, swiss chard 3 way(braised, pickled and dehydrated chips) with a foie gras hollandaise sauce
Brought 3 of the best servers out there(all GMs now). Got all plates, flatware and glasses! 2 of the best chef friends to come and help the day of the party!! Also hire an acoustic guitar player for cocktail hour day of.
Have 15 people say your food is so D.C., so NYC, so L.A., so wherever they are from. Nope it's so Exquisite, haha(so Chicago, trained and accomplished) Desserts provides by his favorite pastry chef in Chicago
