Still my favorite Holidayđź’•

My favorite holiday is almost here! I've had many friends and clients reach out for recipes and tips. I'm so thankful for an amazing year and want to share some recipes and tips to make your holiday memorable and full of delicious food! Please feel free to share this post and Happy Thanksgiving!

Pro tip #1: Be sure and purchase your Turkey and set it in your refrigerator to begin thawing for Thursday by Monday. Place it in a shallow dish to allow for liquid to be caught as it thaws.

Pro tip #2: Use recipes that have meaning to your family. Every item on my table is from a family member's cookbook or favorite recipe. Then copy on paper and divide up between members of the family so that you are not the only one cooking.

Pro tip #3: I make as many things as early as possible. You can start cooking tomorrow and not have a problem.

Our family dinner consists of:

Appetizers of deviled eggs, spinach artichoke cheese dip, ham and asparagus roll-ups, veggie platters, and lemon cookies.

Dinner is served between 2-4: fresh rolls, Turkey, Cream Cheese Mashed Potatoes and Gravy, Sweet Potatoes with Pecans, Strawberry Spinach Salad, Rasberry Jello Salad, Stuffing, Cranberry Sauce, and Green Beans or Corn. Dessert is usually Pumpkin Pie, Strawberry Pie or Apple Pie and Cheesecake

Carrie's Cream Cheese Mashed Potatoes:

5 lb bag of Red Potatoes or Peeled Idaho Potatoes
1 stick of butter
4 oz cream cheese
1 T salt
1/2 T garlic powder
Chicken Broth about 1/4 cup
*Slice potatoes and boil until tender. Drain and mix in Kitchen Aid mixer with butter, cream cheese, garlic, and salt. Once smooth, slowly add chicken broth to the desired consistency.

Carrie's Cranberry Stuffing:

1 1/2 cups chopped onion
1 1/2 cups diced celery
1 stick butter
1 t poultry seasoning
1 t sage
1 t salt
dash of pepper
1/2 cup chicken broth
6-8 cups dried Pepperidge Farm bread cubes
1 lb ground sausage cooked
2 handfuls of dried cranberries
dash of freeze-dried parsley
*sautee onion and celery in butter until tender. Stir in seasonings. Add to chicken broth and bread and then toss with ground sausage and cranberries. Bake at 350 covered for 20 minutes and uncovered for 10.

Strawberry Spinach Salad:

I bag of Baby Spinach leaves
1 apple diced
6-8 strawberries sliced
candied pecans
handful of craisins
dressing: equal parts vinegar, oil, and sugar-blend in a strawberry for added flavor

Roasted Pumpkin Seeds are a tradition in our home on Halloween. They are the perfect snack after all the candy! Savory and crunchy.

The kids carve their pumpkins and I save all the seeds for this delicious treat!

Ingredients

Olive Oil (2-3 T)
1 t salt
1/2 t garlic
1/2 t smoked paprika
1/4 t pepper

24 hours before baking

Rinse pulp from seeds in a colander. Soak in salt water until an hour before baking. Lay seeds out on paper towels to dry.

Preheat oven to 350

Arrange dry seeds in a single layer on a baking sheet. Drizzle with olive oil. Mix seasonings and sprinkle by hand over pumpkin seeds. Bake 15-30 minutes (turning seeds with spatula every 5 minutes) depending on how wet they were when placed in the oven.

Cool and serve! So delicious.

Chocolate Lava Brownie Bowls

Ingredients:

• 1/2 pound (2 sticks) unsalted butter, plus extra for buttering the dish
• 4 extra-large eggs, at room temperature
• 2 cups sugar
• 3/4 cup good cocoa powder
• 1/2 cup all-purpose flour
• 2 teaspoons vanilla
• Vanilla ice cream, for serving

Directions:

Preheat the oven to 325 degrees F. Lightly butter 10 ramekins. Melt the 1/2 pound of butter and set aside to cool.

In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs and sugar on medium-high speed for 5 to 10 minutes, until very thick and light yellow. Meanwhile, sift the cocoa powder and flour together and set aside.

When the egg and sugar mixture is ready, reduce the speed to low and add the vanilla and the cocoa powder and flour mixture. Mix only until combined. With mixer still on low, slowly pour in the cooled butter and mix again just until combined.

Pour the chocolate mixture into the prepared dishes and place it in a larger baking pan. Add enough of the hottest tap water to the pan to come halfway up the side of the dish and bake for exactly 1 hour. A cake tester inserted 2 inches from the side will come out 3/4 clean. The center will appear very under-baked; this dessert is between a brownie and a pudding.

Allow to cool and serve with vanilla ice cream.

This account has been relatively quiet for awhile as I was busy working as Assistant Manager of Catering at Brigham Young University in Provo, Utah. Although I LOVED my job, I left to find a job with a little more flexibility. During the fall, the hard working BYU catering team works as many as 60 hours per week! I still have 3 children at home to raise and that was a bit too much for our family.

I currently live in Utah Valley and still enjoy cooking when I have the opportunity. To my previous followers from the beautiful Gulf Coast-keep following as I will continue to post delicious recipes❤️ To my new followers in Utah Valley-please spread the word that I continue to cater a few events when time allows and would love to make your guests delicious food!

Cooking with Carrie is based out of the commercial kitchen located in the historic Imogene Theater in Milton, Fl and is licensed and insured in the State of Florida. I cater for weddings, office parties, family events and banquets and high school events for Pace High School. I regularly feed the bands that perform at the Imogene (Sammy Kershaw, Lee Ann Womack, John Paul White, Steve Earl, and more all had good things to say about my food) as well as provide the food for their Monthly Murder Mystery Theater dinners. I have taught cooking classes at Alyssa's and sold my baked goods and kitchen collection there as well. Finally, you can purchase my cupcakes, cookies, edible cookie dough and more that is featured at TASTEbuds on Watkins Street in Pace.
