Today we hosted a cooking demonstration for the most lovely family traveling from Saudi Arabia to Orlando, FL, USA!!

It’s been busy this 🎄holiday season in the Carmelina Underground household. From fulfilling lasagna orders, a master class in pierogi making with friends, hosting Christmas Eve and catering Christmas dinner. We’ve been completely blessed this year!

Entree: braised short ribs with red wine demi-glacé reduction, pan seared sea scallops with mango chutney, Greek style potatoes and honey garlic roasted carrots

New creation!! While I was in Italy I got to eat at one of my favorite restaurants, Ristoro Degli Angeli, tonight I replicated one of their dishes, pan seared cod with a tomato, pine nut, olive, basil sauce, with roasted potatoes and sautéed spinach, it was perfect!!
