Last week we prepared a 12 person dinner at home to celebrate two very special birthdays.

Appetizer: mixed field greens with citrus vinaigrette, cherry tomatoes, Bosc pears and crumbled Gorgonzola

Entree: braised short ribs with red wine demi-glacé reduction, pan seared sea scallops with mango chutney, Greek style potatoes and honey garlic roasted carrots

New creation!! While I was in Italy I got to eat at one of my favorite restaurants, Ristoro Degli Angeli, tonight I replicated one of their dishes, pan seared cod with a tomato, pine nut, olive, basil sauce, with roasted potatoes and sautéed spinach, it was perfect!!

Sticking to the diet! Simple but delicious dinner of cherry tomatoes and zucchini roasted with fresh herbs, garlic and olive oil.

After eating salads all week dinner tonight still isn’t completely unhealthy. Grilled Italian sausage on a brioche bun with peppers and onions, the peppers and tomatoes came straight from the garden.

It seems like my olive trees are having a bumper crop this year! Maybe if I actually harvest them I’ll have enough olives to get an ounce or two of olive oil, lol.

Another successful catering event for our friends at Toast Masters in Winter Park! The theme of the meal was Cuban cuisine and we had Ropa Vieja, Mojo Chicken, beef and chicken empanadas, cilantro lime rice, black beans, and a ton of different sauces. Ready for your next catering event? We can create many different cuisines to your liking.

In the test kitchen again, today is KFC or Korean Fried Chicken, some plain fried chicken and some tossed in a ginger-garlic sweet chili sauce, both came out really well!!
