Hey Foodies, something crossed my mind.....

At 'Shuck You' oysters on the go, I do catering and work as a private chef. Here's what I thought, the word private chef may sound like it's more than it has to be. Lemme explain.......
A private chef can be a lot of things..... Of course my specialty is arriving with everything, setting up where there was nothing, then cooking a four course meal of your choice for up to 6 guests, plating, clearing and packing up in less than an hour and a half. Yeah, it would blow your mind and your taste buds! But there's more! Or less in this case........

I can be hired to help you put a big party or dinner together successfully as well. Yep, I can be your dream man ladies. Show up with an apron and my knives and do whatever you tell me to do in the kitchen, dishes included! That's right, you will spend less time working and be able to relax knowing a professional is taking care of the important stuff in the kitchen.

I tell ya' what, it don't get a whole lot better!

Another flawless event in Longwood tonight. We shelled out 2 bushel of Virginia oysters 4 ways plus a 100 ct bag of meddie clams from Georgia 4 ways too.
These people definitely know how to throw a party!
What fun! By the end of the night the musician had the whole house up and dancing, all of 'em! :) Little side affect from eating a lot of oysters I guess?

One bushel Matanzas inlet oysters 4 ways. Thank you Mackers Seafood for coming up with another epic bag of shells.

Apple cobbler a la mode, bacon cheese burgers, brie fondue, red skin grey poupon potato salad, marinated cucumber compari tomato marinade and cilantro citrus poached cocktail shrimp. So glad we expanded the menu. :)

Frozen clams suck..........

Which is why 'Shuck You' oysters on the go uses live whole clams at every event. Not just raw, steamed or sauteed in a Chardonnay bath with fresh chopped garlic and sweet cream but my new stuffed as well!
Yeah, open a live clam then stuff my homemade herb stuffing with sage, basil a little rosemary, golden raisins too then bake away. Hungry yet?

Did you notice our Hawaiian chix kabobs have balls?

Can't get those from a can. Which is why we use whole fresh pineapples then custom cut each piece of sweet fruit next to the meat on your stick.
Wait till you taste the goodness filling your mouth after these have been blasted with pureed mango chutney while they chargrill in front of you. Hungry yet?

What sets us apart.....

When I say, "Tenderloin Cowboy Kabobs" I mean, a whole unfrozen tenderloin personally butchered to fit onto sticks accompanied with fresh veggies. Nothing I put on a plate is manufactured. It gets better.............
While they're cooked on site, to order in our portable kitchen, I'll be brushing them with an original Jim Beam ginger aujus sauce. Hungry yet?

Cowboy kabobs; tenderloin with button mushrooms, green peppers, red tomato, onion then brushed with a ginger Jim Bean au jus sauce
Hawaiian chix; pineapple, yellow/orange tomato, red pepper then brushed with my homemade mango chutney. Don't forget the clams! :)

The local Atlantic harvest is unequivocally second to none.
