Laurie, a wonderful follower, made my baked rice recipe and raved about it! I have to admit, it really is a great one! Link to the recipe is in the comments. And if you can’t find the chicken gumbo you can sub any canned soup that’s not a “cream of”! Thanks for sharing Laurie!!!

When I was a kid I was often with my Grandparents. They had a camper they went to on the weekends in Marseilles, Illinois. They loved going to dinners and having a proper meal with pre dinner cocktails and appetizers and the whole experience. We used to go to this supper club like place in Ottawa, Illinois called Monty’s Riverside Inn. I remember this pork chop dinner and you could get spaghetti on the side. This recipe is my memory of that. The chops are so flavorful and then you make an easy, pasta side tossed in the pan juices from cooking the pork. It’s SO delicious. The recipe is linked in the comments. You will really enjoy this one!
