The Conversation Episode 11 Featuring Chef Roderick Smith
The week we are chatting it up with Chef Roderick Smith !! Jacksonville native graduated from Wolfson High School in 1998 before attending the Southeast Institute of Culinary Arts in St. Augustine, Florida. When graduating in 2000. Chef Pete has been exposed to various areas of the culinary industry, including managing a gourmet food truck and resort restaurants, owning restaurants, developing restaurants, bar/lounge design concepts, baking, and pastries. Chef Pete went on to become a Chef de Cuisine at the young age of 22 at Restaurant Medure in Ponte Vedra Beach Florida. At a Four Diamond Restaurant, he was the youngest African-American chef ever to run a Four-star restaurant in the state of Florida at that time. Now with over 22 years of professional experience, Chef Smith has directed many areas of Food & Beverage Divisions at the Forbes Five-Star level. His first passion for cooking is complemented by his experience which spans across the entire spectrum of the culinary industry.

This week we are so excited to have a conversation with Chef Jeff Crittenden, Chicago - Born, Bahamian - Bred, classically-french trained and inspired to cook by his grandparents that raised me. I apprenticed at Atlantis Resort and Casino and The Ritz Carlton - Chicago before I graduated from Kendall College. I studied in France for 3 years where I worked for a few notable chefs such as Alain Ducasse and Dominique Toulousy. I have worked for The Four Seasons, The Wit Hotel, and Compass Group. I held my first executive position at The SkyLine Club in Chicago where I was the Head Chef. Presently, I am a Private Caterer based in Chicago. He is a husband and father of 3. Jeff enjoys bike riding, reading, and spending time with family.

Elle is Executive Editor/Inclusion Leader at America’s Test Kitchen. She is also a food stylist for Cook’s Country, an on-screen test cook for America’s Test Kitchen, and host of “The Walk-In” podcast. Elle creates media content for both ATK television segments and ATK Social Media. She also works to boost ATK’s diversity efforts and promote a culture of inclusion with a specific focus on recruiting mentorship, and retention. As the founder of SheChef, Inc., a professional networking organization and social enterprise, Elle provides mentoring to women chefs of color pursuing culinary arts as a career. With her creative eye for telling a story with food and her unique contribution to the dialogue surrounding women in business, Elle has appeared on Food Network, Food Network Magazine, The Cooking Channel, The Katie Couric Show, CBS Corporation, ABC’s The Chew, and Bravo’s Chef Roble and Co. Elle has been featured in stories in the Boston Globe, Forbes, Eater, and on the Tom Joyner Morning Show and National Public Radio.

It is still WOMEN'S HISTORY month and we are STILL talking with our Sister Chefs !! The Wednesday at 6:30 pm central we have Adrian Lipscombe!
Adrian is the chef-owner of Uptowne Cafe and Bakery and founder of the 40 Acres Project. A native Texan, Adrian opened Uptowne Café restaurant on the Northside of La Crosse, WI, as a catalyst for urban change, working with the community to help revitalize the area. Uptowne functions as a community impact space, operating an open-door policy and providing a safe haven to everyone in the community. Adrian’s food focuses on southern cuisines while using local ingredients and working with farmers in the Coulee Regional and Organic Valley area. Adrian draws inspiration from life experiences and African American culinary history to tell the story of African American influence in our food culture today. Currently, Adrian is working on the 40 Acres Project, whose mission is to preserve the legacy of Black agriculture and foodways by purchasing land for Black farmers to practice traditional agriculture methods, provide resources for the food industry, create educational opportunities and a historical archive of information on traditional Black agriculture and foodways, and partner with organizations, Black farmers, and the hospitality industry. Adrian holds a master’s in architecture and is currently a Ph.D. candidate in urban and regional planning at the University of Texas at Austin, concentrating on the behavior of minorities for land use and transportation.
