A little progression of the make and aging process for our spiced Gouda style “Velvet Dutch”!

One of my very favorite cheeses! Pleasant Ridge Reserve from @uplandscheese in Wisconsin is a complex and delicious Alpine style cheese only made 10 weeks out of the year. This one is almost one year old!

First flip for our inaugural batch of “Andy” our Tomme-style which will be aged 4-6 months!

First flip on our first batch of Velvet Dutch in our new space! These will be ready in about 6 weeks!
