A taste of New Orleans- 2 Go! We cater business/office, wedding parties, school event, fund raisers,etc. Let us put together a perfect cuisine to make your event spectacular. We take pride in making from scratch cajun favorites, passed down family recipes including- marinades used for meat injections, all our sauces/condiments, side dishes and chef’s personal

blend of seasonings and rubs. Beans and rice are made using dry beans and fresh herbs and vegetables. Andouille is housemade from curing, grinding and stuffing into casings then slow smoked with pecan wood to perfection. Smoked pulled pork is injected with our specail housemade marinade and a dry rub applied, then slowed smoked in pecan wood to deliver the perfect balance of smoke flavors and tender juiciness. Gumbo starts off first by our dark roux. Using Louisiana blue crab and shrimp, chicken or our fresh housemade smoked andouille sausage makes this dish as authentic as it gets! Growing up in the New Orleans and with my Maw maw and Paw Paw in Manchac where they ran a trauling boat, enjoying all the fesh seafood and Cajun/Southern classics. My business evolved when moving across country to Las Vegas Nevada and finding it hard to come across that slow and low smoke flavor and downhome sides I was searching and missing. After awhile my wife and I decided to start out on our own creating that perfect smoke flavor with the right combination of rub and spices. From there the wheels started rolling as listed above we put our heart, sweat and taste buds to the test to perfect our craft in true southern BBQ, smoke flavors and downhome Cajun cooking. We take pride knowing our food is homemade from family recipes passed down generations and secrets. We are now pleased to say we are back in the south and ready to roll! After spending 5 years in Las Vegas Nevada and sharing our food in the big city. It was time to come back down south. Thank you for taking the time to read. Here we go Flagler County, we have a 3 day weekend setup around town! We will have our famous Shrimp-N-Grits, so you should be able to make it by on one of them. They are creamy, buttery grits topped with bacon, blackened shrimp, etouffee sauce, cheddar and mozzarella cheeses and parsley.

Our Story

We are a local Lousiana food truck. Aside from our mobile lunch and dinner services, we also offer catering to businesses, special events- schools, school sports, fund raisers, church events, weddings, parties and festivals

It all started with my Maw Maw Bea and Paw Paw George Moran “Baby George.” They lived in Manchac, LA on the canal off Manchac Pass. There they operated a trawling boat and ran crab traps in Lake Pontchartrain and Lake Maurepas. Maw Maw Bea was always cooking up great food with all the seafood the area had to offer. Paw Paw George was great with seafood boils.

We make a smoked sausage and andouille is housemade from grinding,stuffing into casings, then slow smoked with pecan wood to perfection. We also make our own boudin which we mostly do fried boudin balls.

We get biggest fresh shrimp out of Mayport, FL and peel and devein them ourselves. We use our own battering technique and spice blend “Cajun Dust” is what we call it. You can order just the shrimp or make it a basket and get our homemade popular sweet hushpuppies and any side of your choice. Our side options can include anything from fries, seasoned cabbage, red beans & rice, crawfish etouffee, jambalaya, grits, gumbo or whatever we have available that day!

We make most of our sauces from scratch and are unique as you wont find any that quite taste like these! Our homemade sauces include aioli, remoulade, cocktail, BBQ, teriyaki and honey mustard. We also offer ranch, tarter, buffalo and an assortment of hot sauces.

Red beans are made using dry beans, fresh herbs, onions and a special spice blend made in house. The red beans can be topped with our homemade smoked sausage for the ultimate experience. I would recommend adding some pickled jalapenos and a dash of hot sauce.

Brisket and pulled pork are injected with our specail housemade marinade and a dry rub applied, then slowed smoked in hickory wood to deliver the perfect balance of smoke flavors and tender juiciness. Gumbo starts off first by making our dark roux. Using Louisiana blue crab and shrimp, chicken or our fresh housemade smoked andouille sausage makes this dish as authentic as it gets!

Jambalaya-Bacon, Pork and our housemade smoked sausage cooked with the cajun holy trinity- onion, celery, bell pepper and rice.

Crawfish Etouffee-Crawfish tails cooked into a mild spiced butter sauce with garlic, onion, celery and bell pepper, served over rice. Our business evolved when moving across country to Las Vegas Nevada and realized great Cajun food and smoked meats are hard to come across. After awhile my wife and I decided to start out on our own creating a catering company and participating in festivals while out in the Las Vegas Valley. It was definitely a lot of fun to do and we made plans to begin our new journey to owning and operating a Cajun themed food truck. We then moved to the Florida Panhandle between Destin and Pensacola to start our venture. From there the wheels started rolling as listed above we put our heart, sweat and taste buds to the test to perfect our craft in true Cajun cooking and southern pit BBQ . Although we only offer the smoked pulled pork on the truck, we are equipped to excecute some of most flavorfull and well seasoned and smoked brisket, ribs and chicken you ever sank your teeth into. We take pride knowing our food is homemade from family recipes passed down for generations. We are now pleased to say we are back in the south and ready to roll! After spending 5 years in Las Vegas Nevada and sharing our food in the big city.
