Negroni without Campari? Yes, it is possible.
I love the classic Negroni, of course. But I love different riffs of it, too.
Recipe:
30ml-1oz RASPBERRY GIN
30ml-1oz BERGAMOT LIQUEUR
30ml-1oz WHITE VERMOUTH
5 drops CREOLE BITTERS
GRAPEFRUIT OILS
Stir, chill & dilute. Dilution with meltwater is the key to develop its full flavors.

Recipe:
🔸 50ml Gin
🔹 25ml Dragonfruit syrup
🔸 25ml Lemon juice
🔹 An egg white
🔸 Garnished with brûlée and crushed freeze dried dragonfruit

For the brûlée add sugar to a bar spoon and torch it over the cocktail. Have a ceramic mug with cold water in to add the spoon to when you’re done. The cocktail remains cold even if you point the torch a bit down, safety first and all that.

For the syrup:
🔸 250ml freeze dried dragonfruit
🔹 250ml water
🔸 250ml sugar
Heat in a pan on mid for 5 mins, mid/low for 15 and then leave without heat for 30mins. Strain out any solids, bottle and refrigerate up to 2 weeks. Dry shake & wet shake for fluffy goodness

Recipe:
🔸 1.5 oz gin, optional
🔹 1 oz lemon juice
🔸 1/2 oz thyme syrup
🔹 3/4 oz cucumber & thyme juice*
🔸 2-3 sprigs of fresh thyme
🔹 Sparkling water to top

In a cocktail shaker add everything except the sparkling water. Add ice and shake.
Double strain into a spritz glass filled with ice. top with sparkling water, and garnish!

If you’ve been following along for a while, you already know how I feel about the Last Word Cocktail. But if you’re new…let this video catch you up to speed.
This is for anyone who wants to throw cocktail parties at home, but don’t want to spend the entire evening in the kitchen. I’d suggest consuming this the day you make it although the alcohol does preserve the lime juice a bit - so no rush.
Drink: Batched Last Word
375ml Green Chartreuse (the full bottle)
375ml Gin (something in the realm of London Dry)
375ml Maraschino Liqueur (I find @luxardoofficial packs a good flavour)
375ml Fresh Lime Juice (gotta be fresh!)
Stir the batch before pouring into individual containers
Preparation: Pour 3-4oz (Or 8oz if it’s a party) of the batch into a shaker with ice and shake for no more than 10 seconds. Strain into a chilled coupe glass. Garnish: Cherry

Clarified lime cordial!
Making a clarified lime cordial sounds complicated, but there’s two steps- clarifying and sweetening. After clarifying, I add a few more steps to maximize lime flavor, but really sugar and water can be added to the clarified juice and you can call it a day
Clarified lime:
Recipe dependent on weight but after juicing your limes, reserve some water in a 4:1 juice water ratio. Measure out 0.2% agar by weight.
Add water, agar to a pot and heat until boiling. Once boiled, remove from heat and wait for a bit before adding lime juice into the water. Stir a bit, let it set in the fridge. Use a cheese cloth to filter the “curds” out of the agar mix
Cordial:
200 g lime cordial
200 g sugar
200 g water
20 g lime peel
5 g orange peel
8 g citric acid
4 g malic acid
1 g salt
Add all ingredients to a sousvideable container, sousvide at 135 for 1:40, then 140 for 20 minutes. Strain and cool. Enjoy!
