Happy Memorial Day everyone!!! Hope you all had a wonderful day!!! Steph and I both had to work today so it was a late dinner tonight but turned out delicious!!! I couldn’t think Steph enough for helping my slice the red skinned potatoes, onions and make foil packs for the potatoes with onions and brussel sprouts!! Then had a burger with it.

Tonight I Polar Catering had the opportunity to cater to a family friend of ours for a grand opening for her small town business called Koi Pond Studios inside a local mall. Tonight it was Hors D’oeuvres which was cherry tomatoes 🍅, Colby Jack cheese, ham, bologna, sausage and a wheat cracker. A veggie cup with ranch, red & yellow bell peppers, carrot and celery. An almond cookie and Ramen Noodle salad. I couldn’t do all this without the help of my wonderful wife Stephanie J. Byrne, so thank you so so so very very very much for all your help to my wife!!!!

HAPPY TACO TUESDAY EVERYONE!!!!! Haven’t made this recipe in forever and we tweaked it a little bit and turned out delicious!!!! It’s something we made up and it’s called Mexican Lasagna!!!!! The only thing that was missing was sour cream! 😢😢😢
