We headed just down the coast to Navarre to sling some oysters at a fantastic brewery with an awesome outdoor space. The Pensacola and Perdido Bay Estuary Program was also there showing The Humble Oyster.

We sold out of 800 oysters in just over 2.5 hours. We would have brought more but demand and last minute requests for Grayson Bay oysters lightened our load a bit.

We are booking up through spring.

We were on the search for our signature ingredient to the ECO Black Garlic Cocktail since was closed today. Luck had it, we found it at the Butcher Shoppe.

Our love for these local emerald Gulfcoast waterways isn’t just something that happened over night, no, these waters have run through our lives & so many generations before us. They are a part of who we are, & those before us, but we must work together to preserve them, embrace the legacy and prepare for the future.
After a wild few weeks that all merged together, we took some time tonight to relax & spend it with family & friends, who with farm hours, sometimes seem to only be seen in passing.
Tonight our own sauce boss, Rusty Rooster Seasoning Company’s dad, who is the youngest 81 year old around, Jammed out with his buddy Bob Daniels @ Milton’s famous Oval Office. It was quite the treat… a really fun evening, & their food always hits the spot! Not a healthy spot, but a good spot!

We are a local Oyster catering company who also works directly on the water each day helping our hardworking local oyster farmers so we just like to make a friendly public reminder this time of year that…
*Our local oyster farmers are on the boats before the sun comes up for harvest days, sticking to strict state guidelines and having the oysters off the water by 10 & in “R”efrigeration before 11 a.m. and below 45° within 2 hours. This hinders any kind of bacteria/Vibrio growth and allows the consumer to enjoy oysters ALL YEAR LONG! The waters are tested daily not just by us, but also mandated by the state and are closed to harvest if the numbers are obscured, but this spring and summer has been great water conditions for tasty Local Oysters! The Pensacola area is blessed to have knowledgeable oyster farmers who truly care, out on the water everyday to bring you the freshest, tastiest, safest, sustainable oysters around!

People always ask us at our events where they can purchase and consume LOCAL sustainably farm raised oysters, fresh from our local waterways, so we are going to try and keep the Pensacola Public informed and help Pensacola Oysters be what you shuck, enjoy, & crave!
So here is the local weekend oyster harvest report compiled from information direct from the LOCAL aquaculture farmers that we have been in contact with including the post from Emerald Tides.

Emerald Tides Oyster Company from the east of garçon point bridge has bagged up their Fresh, salty oysters from their East Bay farm and they are available to pick up a bag or two at Maria's Fresh Seafood (Pensacola), Blalock Seafood and Specialty Meat (Gulf Breeze), Where Y'at Seafood (Navarre), or sit down and enjoy while dining at The Grand Marlin (Pensacola Beach)

ECO was created upon the idea that local craft oysters needed more representation and education within 50 miles. We hated seeing local grown oysters loaded up on trucks to go out of town by the thousands, and locally by the hundreds. With every event, ECO made sure to source only the most locally available oyster and present them to the clients with a perfect shuck and a backstory on who grew the bivalves, and we loved meeting and talking with each and every one of our clients.

Recently, Thomas was offered a position with Florida Sea Grant to be the Extension Agent for Santa Rosa County, Florida, and we are happy to report he starts in a very short time. Thomas is EXTREMELY happy to be moving into his dream position, and realizes that ECO cannot survive while working as an Extension Agent. Therefor, we have started the process of transferring everything over to a few familiar faces. Brandon with Grayson Bay Oyster Co. and Corey with Rusty Rooster Seasoning Company will be taking the reins and will be able to provide you with a top notch experience!

While we transition, we will be slowly accepting jobs starting middle to end of May, so please bare with us. Thank you so incredibly much for this wonderful ride, and we all look forward to the future of ECO!

🥳NOAA has awarded over $24 million for three projects in our watersheds! This transformational opportunity will support the:

🦪Pensacola Bay Oyster Restoration Initiative - $10.9 million
🌱Perdido Watershed Initiative - $12.8 million
🦪 EscaRosa Oyster Shell Recycling Program - $300,000

Through these projects, we will restore about 247 football fields worth of oyster reefs, launch a Living Shoreline Cost Share Program, and so much more!

Hey Pensacola! Come out and see me at The Well on Saturday to get your fix of delicious small bites and oysters! The Cubans are my personal favorite, made with Kingfisher bread, but the Smoked Mullet Dip with some Biloxi Bacon has also been a big hit. I am also shucking some of the most incredible oysters right now (Treasure Coast Shellfish and Rattlesnake Cove Oyster Company with some absolute beauties) paired with a The Black Garlic Market inc mignonette, so don’t miss out!
I’m open Saturday from 4:00-9:00 so come out and taste test this menu!
