Christian Chefs International (CCI) and CCI Pensacola, exists to support, encourage, and equip Christian chefs, culinary professionals, back of the house employees, front of the house hosts, managers and servers, and students who want to integrate their faith with their culinary careers. Homemade red Chili Sauce



1 peck tomatoes
8 green bell peppers
4 Jalapeno or Serrano
6 medium onions
3 c sugar
¾ c salt
12 medium red bell peppers
1 qt vinegar
3 t ground cloves
3 t cinnamon
2 t nutmeg
2 t ginger

Chop all ingredients and mix well. Bring to a boil and continue to boil for 3 to 4 hours until thickened and cooked thoroughly. Pass through Ricer/foodmill or puree with emulsion blender.
