Homemade red Chili Sauce



1 peck tomatoes
8 green bell peppers
4 Jalapeno or Serrano
6 medium onions
3 c sugar
¾ c salt
12 medium red bell peppers
1 qt vinegar
3 t ground cloves
3 t cinnamon
2 t nutmeg
2 t ginger

Chop all ingredients and mix well. Bring to a boil and continue to boil for 3 to 4 hours until thickened and cooked thoroughly. Pass through Ricer/foodmill or puree with emulsion blender.

Easy crispy summer slaw
1 medium head cabbage shredded or chopped
2 Granny Smith apples julienne
1 small bulb fennel sliced very thin on mandolin
1 red bell pepper julienne
1 small red onion julienne
1 carrot julienne

1 cup sugar
1 cup apple cider vinegar
1 teaspoon celery seed
Salt & pepper
Bring sugar, vinegar, celery seed, to a boil, pour over slaw. Mix thoroughly place in bowl with lid and pop in fridge over night shaking every now and then. Next day you will have the most refreshing summer slaw that will last for days
