Working today but still made some Super Bowl snacks 🏈 🎉
I had some left-over frozen berries from mine & Kaias last cookie creation and this was just the way to use them!
So quick, easy & oh so yummy on this rainy Saturday 🍓
Berry Crumble
3 cups frozen berries, any kind
3 TBSP sugar
1-2 tsp cinnamon
2 TBSP cornstarch
Sprinkle dry ingredients on berries snd stir gently.
With food processor, blend:
1 cup all purpose flour
1 cup sugar
1 stick butter, room temperature
Until crumbly.
Spray baking dish or iron skillet.
Pour berries in and cover with crumble.
Bake on 350 degrees 30-30 min and serve with icecream 🎉
What a fun weekend we’ve had! Prepping for next weeks baking, taking a break for a little Target 🎯 therapy, putting sweet Marvie’s Cars cake together, an amazing Candlelight Experience String Quartet Event featuring Taylor Swift music 🎶 (just beautiful !) Then on the way home, deciding to make Kaia’s amazing Raspberry Chocolate Chip Cookies into an ice cream sandwich! You HAVE to make this quick! You’re gonna LOVE THEM!!
Kaia’s Raspberry Chocolate Chip Cookies
*3/4 cups melted butter
*1/4 cup sugar
*1 cup brown sugar
*1 whole egg + 1 egg yolk
*2 tsp vanilla
*2 cups all purpose flour
*3/4 tsp baking soda
*1/2 tsp salt
*1 cup semi sweet chocolate chips
*1 cup frozen raspberries ( keep in freezer until you’re ready to mix them into the batter)
*1 container Tillamook White Chocolate Raspberry Ice cream
*Preheat oven to 350 degrees.
*Combine melted butter and the sugars, mixing well.
*Add the eggs next, then the vanilla .
*Add the dry ingredients—flour, salt & baking soda and mix until combined.
*Fold in the chocolate chips and then gently add the frozen raspberries.
*Place dough in the refrigerator for 30 minutes. (This will keep the dough from spreading too much)
*Mound about 2 tablespoons of the cookie dough 2-3 inches apart on your baking sheet.
*Bake on 350 degrees 12-15 minutes. As all ovens vary, keep checking to make sure you don’t overcook or if they need a few minutes more.
*Let cool on baking sheet for 2 minutes and carefully move to a wire rack to cool.
*When completely cool, mound a few tablespoons of the Tillamook White Chocolate Raspberry Ice Cream on a cookie and top it with another.
*Wrap each cookie in Saran Wrap and freeze for an hour.

Can you believe it’s 1 week until Thanksgiving Day?! If you are as busy as me this year, and there’s just a couple of you for dinner, I’ve designed a quick & easy meal and dessert 😊 Mom & I gave it a trial taste test today and she approved !!
We are going to grab these ingredients from Walmart because I’ve only found the dressing there. If you’ve never had it, it’s as absolutely as close to homemade as any I have ever tried.
I found the Turkey Gravy in a 2 pack at Sam’s and it’s very yummy! But if you’re at Walmart you could get a jar of already prepared Turkey gravy 😊
Mom loves the Jellied Cranberry Sauce but you can get the Whole Berry kind if you’d like.
The Puff Pastry is in the dessert freezer section.
I cut one sheet of the pastry into 4 squares and chopped up my Turkey.
I had actually baked a turkey for sandwiches this week but you can get a pound of some great deli Turkey to use.
You will have to pop the dressing in the oven to bake about an hour…instructions are on the box.
Chop the turkey, place a spoonful of dressing over the turkey, add a spoonful of cranberry sauce, seal the edges of the pastry with melted butter and press edges with a fork to seal.
Bake on 400 degrees 25 min until golden brown. Serve with a dipping cup of hot gravy and a little side of the cranberry sauce!
On to our easy peasy dessert! 😁
You’ll need 1 large red or green apple of your choice, 1/2 cup sugar and 1 TBSP cinnamon, and caramel ice cream topping.
Cut your apple in rounds, remove the core and slice in half.
Cut the 2nd pastry sheet into long strips with a pizza cutter. Dip each apple slice in the sugar/cinnamon mixture and wrap with the puff pastry strips. Dip again sugar/cinnamon.
Place in baking dish and bake on 400 degrees 20 minutes until golden brown . Drizzle a bit of caramel topping over each one and enjoy!

Cheesecake Salad
Cut up a 6-8 inch cheesecake into cubes.
Layer 1/2 into 9 x 13 pan.
Add cut up strawberries, blueberries, blackberries & raspberries.
Drizzle with strawberry glaze, blueberry glaze and raspberry filling.
Do the same with the 2nd layer.
Melt 1/3 cup chocolate melts and drizzle over the top. Refrigerate an hour or overnight. Scoop into bowls & enjoy!

Air Fryer Blueberry Pie Bombs
1 can Blueberry Biscuits
1 can blueberry pie filling —-you won’t use it all.
Flatten out each biscuit into rounds.
Place 1-2tsp of the pie filling in the center of the dough. Carefully pull up the sides and pinch together until you form into a ball. Spray your air fryer basket with nonstick spray. Cook on 330 degrees for 7-8 minutes. Microwave the icing that came with the biscuits for about 20 seconds and drizzle over each biscuit. Enjoy!
Have y’all heard of the popular White Chocolate Coconut Bundt Cake that’s also known as The Tom Cruise Cake? Apparently Tom sends this to all his friends in Hollywood for Christmas 🎄 Since I LOVE Coconut Cake and I’m not on THE list, I tried this copycat version to see what all the fuss was about! Oh boy…it truly is the best coconut cake I’ve ever had! If you’re a coconut fan like me, you need to make this! You’ll notice a portion of the cake cut out in my pictures. Mom is not a fan of icing, so I saved her some in Poundcake form and it’s truly yummy even plain!
White Chocolate Coconut Bundt Cake
3 cups cake flour
1/2 tsp salt
1/4 tsp baking powder
3 sticks butter, room temperature
2 3/4 sugar
2 tsp vanilla extract
1 TBSP coconut extract
1 pkg instant coconut cream pudding—I could not find it, so I used Cheesecake flavor
1 cup sour cream
4 oz bar Ghirardelli White Chocolate, grated
Mix the flour with the baking soda and salt and set aside.
In your mixing bowl, cream the butter, sugar and flavorings for about 5 minutes until light and fluffy.
Add the eggs one at a time, scraping down the side of the bowl.
Add the pudding and sour cream, mix well.
Agh the flour mixture.
Add the chopped white chocolate.
Mix on low until all combined well.
Pour batter in sprayed and floured Bundt pan.
Bake on 325 degrees for an hour and 40 minutes, or until toothpick tests clean.
Let cool 10 minutes on wire rack before turning out on plate and then I turned mine over again so that the gorgeous crust would be in top.
Let cool completely.
Icing:
1 stick butter, room temperature
8 oz cream cheese, room temperature
2 tsp vanilla extract
4 cups confectioners sugar
2-3 TBSP heavy whipping cream
Cream butter, cream cheese and vanilla. Add the confectioners sugar and combine well. Add the whipping cream and beat until fluffy.
Spread on cake and top all over with the coconut.
