Four courses and four kombuchas will be served over an evening of casual discussion about the history and benefits of kombucha, sommelier pairing techniques and seasonal & local ingredient sourcing.

When a caterer also runs a pop-up restaurant, the crowd gets what they ask for! We are excited to swap up the menu and take a new approach... Don't worry, local sourcing will always be priority one!

Come split an entree with your spouse, date, neighbor, shoulder-parrot or childhood imaginary friend and we will serve it to share complete with extra sides and a cup of real Texas chili or small guajillo Caesar salad.
..and what sort of Texas cuisine pop-up would we be without tacos? Mix or match or Mole pot roast or roasted chicken with guajillo & sage gravy on homemade tortillas!

We are prepped and ready to serve you at our Monday supper club Sage In Bloom! Join us for white-tablecloth service with out the pretense and enjoy true Texan cuisine in pure form.

To celebrate the Vegan Chef Challenge - Southeast, we also have a 3-course tasting menu for only $35 featuring new dishes featured only for the month of February.

Mole is labor of love and man were we putting in work tonight…

We start with anchos, guajilos, cascabels, mulatos and a few chipotles toasted and ground with caramelized onion and roasted tomato. We puree that and sweeten it with raisins and dates, thicken it with ground almond, peanut and pepitas then cook it with 12 different aromatic spices including coriander, anise seed, cinnamon and nutmeg…. After resting it and smoothing it out we are only on step one.

How much time do you have to hear the rest? Maybe you should just come taste it this Monday at Sage In Bloom!
