I've been MIA to handle all that life has thrown and reset to those that matter most and my passion... family, food, and memories.

My family dynamic has changed but my passion has not.

As I have settled into my new norm, I wanted to extend my services to others again.

Long post, worth the read if you're interested in farm fresh eggs. Have you noticed prices rising all around you?

Here at the homestead we definitely have and also have seen items sell out due to availability being low.

We live in a harsher weather than most and during January and February most of our hens hit a time where they take a "laycation". It means they just stop due to lack of real sun, grass, and cold temps. My girls are pasture raised, they roam free, all day, and are cooped at night for safety. They eat all they please during spring, summer, and fall, but when true man winter comes, there just isn't anyway to give them green grass and live bugs they can peck for. This all leads to a reduction in eggs. Normally we sell our cleanest excess with full bloomed eggs, meaning unwashed counter safe and a baker's dream.

We have switched gears for the times, saving those eggs to be water glassed for winter use and selling our not so pretty but still intact bloom, would recommend washing prior to cracking but still counter safe eggs.

With that being said eggs are $4/dozen if you have containers and or scraps... if not $4.50/dozen. Why the price raise?

Commercially farmed hens eggs at the cheap stores are $3.50 or more, they are washed and treated horribly to get those eggs and just like everything else their supplements/food are increasing in price as well.

For my other homesteaders and backyard chicken farmers, water glassing your fresh eggs can help them to be fresh for a YEAR or more!!! Each half gallon fits roughly 16 eggs and a quart of water with an ounce of pickling lime. The flavor profile isn't changed and they are safe to consume if packed properly.

Summer is not over but routines are getting in place so we can have an effective school year for our kiddos and family.

This year all of our babies will be in school and it is getting hard to believe they are growing up or in our oldest's case graduated, engaged, and enlisted already 😳

So in true homestead fashion, meals are coming back into consistency.

You need a workout just to hold this cheesecake. I regret not weighing it prior to delivery. It has a full layer of brownie as your crust and then peanut butter cheesecake with mini Reese's cups mixed in with a dark chocolate ganache, topped with more mini Reese's cups and Reese's dipped pretzels. 😋

I'm so appreciative of all the recent orders and can't wait to get back into the kitchen but I'll be closed tomorrow thru Thursday morning.

Today was hot 🔥 🥵 and our home was built in the 1840s-50s....

We ended up not having enough leftovers and wanting something that wasn't going to heat our home on top of mother nature.

Hawaiian Poke Bowl was an easy, light, and delicious go to this evening.

Sushi sticky rice with sesame marinated ahi tuna, smoked salmon, English cucumbers, carrots, mango, seaweed, NOT* (this is for my husband because I have a restaurant supply of sesame seeds and use previous shaker and it says roasted on the sticker 🤣), and greens. There are many other things to be added or removed if needed but man this hit the spot today!

Our family has been going through a lot of changes lately. Our oldest graduating, going off to the Air Force, and so on.

I'm back in the homestead kitchen this week and boy is it hot!

Tonight we're dining on fresh greens, cherry tomatoes, peppers, cucumbers, red onions, sautéed pineapple, with our harvested chicken in a sirarcha pineapple 🍍 marinade.

This week I'll be getting a good majority of our canning done!
