Sometimes... you need to turn up the heat! 🔥 Flambé, which is French for “flaming” or “flamed” is a cooking technique not only done for dramatic effect, but also to develop a rich flavor. In the kitchen with Chef Pierre, we caught up with him on all things flambé and why he enjoys this style of cooking:⠀

“In this particular station I was preparing a Greek dish called ‘Saganaki’ using Halloumi cheese. Here, I lightly browned the cheese on each side and added a small amount of brandy to set the flame. This cooks off all the alcohol to enhance the flavor while toasting the outside of the cheese, letting the cheese to get soft and warm without burning. I enjoy doing flambé stations because it’s always fun to see the guests' reactions when I set the pan on fire. They always have a lot of questions, which allows me to really interact and talk about what I’m doing.”
