After 8 unforgettable years, today we say goodbye to our beloved little 7x15 food trailer that held our biggest dreams.

We lovingly called her "La Coqui", when we started her up in March of 2017 with nothing but passion, a few borrowed folding tables, and hearts full of hope. Our very first night was outside The Rock in the Melrose District, nervously serving food and wondering if anyone would even order from us. Some nights, they didn’t. So Juan and I would sit in the truck, play briscas, and remind ourselves why we started. Other nights, we couldn’t keep up. We'd have lines around the block, food flying out the window, laughter, music, and love filling the air. We saw first dates turn into families. We watched the community rally behind us, lift us up, and never let go.

La Coqui was more than just a trailer; it was where we learned, hustled, failed, grew, and dreamed out loud. Every inch of that kitchen holds memories: of late nights, early mornings, burnt fingers, belly laughs, and quiet moments of doubt that we pushed through together. She carried our culture, our hustle, and our hearts wherever she went. Despite many challenges, somehow, we always kept going. Rain or shine, 115-degree heat or 40-degree nights in coats and beanies, we showed up because you showed up. We invented dishes like our Mofongo Bowl that became a signature, and with every bite, we shared a piece of Puerto Rico, of ourselves.

It started with just the two of us, Juan and me, dreaming out loud. Then, after the pandemic, that dream grew louder. Friends joined the team, customers became family, and eventually, we outgrew the trailer that had once seemed too big.

We feel a deep, aching nostalgia saying goodbye, but even more, we feel immense pride. La Coqui helped us build something beautiful: our very own restaurant. And now, it’s time for her to help someone else build their dream.

To everyone who ever stood in line, brought a friend, told someone about us, or just shared a smile through the order window, thank you! You gave this truck its heart.

La Coqui, thank you for the memories, the miracles, and the meals. You were so much more than metal and wheels, you were our beginning. 💛🖤

"I ordered to-go from Phoenix Coqui and the staff were super nice. Restaurant is small but clean inside. I ordered a pernil plate and tostones con carne frita. I received huge portions of both for a cheap price. The pernil was slow cooked, smoky, and well-seasoned. I think it was cooked all day! Carne frita was freshly fried and also well seasoned. So delicious. Tostones reminded me of being on the island; fried plantains are always yummy! I can’t wait to try everything else. If you want to try Puerto Rican food or are from the Island and want a taste in Phoenix, this is the place to go!"

Welcome to Phoenix Coqui — Our Story

If you’re new to Phoenix Coqui, allow us to (re)introduce ourselves. We’re Juan and Alexis, the founders behind this dream-turned-reality. What you see today began humbly, in our home kitchen, long before the food truck or our restaurant.

In 2015, just a year after moving to Phoenix from Puerto Rico, we were homesick—not just for the island, but for its food. Authentic Puerto Rican flavors were nowhere to be found, so Juan took matters into his own hands. He called his family back home, collecting treasured recipes—from sofrito to pernil—and began cooking.

The moment those aromas filled our home, we knew we had something special. We started small: Juan cooked lunch specials, and Alexis made deliveries to homes, offices, and schools. We packed everything into a Honda Civic and served meals to friends, family, and anyone hungry for real Puerto Rican food.

For nearly two years, we did it all ourselves—saving every dollar until, in 2017, we purchased our first food truck. Phoenix Coqui officially hit the streets and found a home at The Rock on 7th Ave and Indian School. At our grand opening that summer, the line wrapped around the block, and we sold out in just two hours. That momentum carried us forward, growing steadily through the years.

Then came 2020. Like many others, we had to shut down for three months. When we reopened in June—right in the middle of the Phoenix summer—everything had changed. With bars closed, our nighttime schedule shifted to daytime. But that pivot proved to be a blessing. Our high-quality food, quick service, and outdoor, low-contact setup made us a go-to spot. It was a turning point.

That growth gave us the confidence to dream bigger. In February 2022, we opened our brick-and-mortar restaurant, just a block from our original parking spot.

Many know us from our food truck days, but few know the journey began even earlier—from scratch, in our home kitchen. Today, we invite you to experience the authentic flavors of Puerto Rico and make yourself at home with us at Phoenix Coqui.
