I'm revamping my BBQ pits workstation and putting the monster smoker in a new home on a BBQ Island Pergola. When I get this project complete, I'll be in full operation back to work with LBCo. Very soon, I'll be doing outside pop-ups in strategic locations. But I need a better organized and cleaner way to cook so that's in the process now. LBCo will be back very soon, and people will be able to enjoy the #1 Brisket and Pork in AZ again.

LBCo is in the sausage game now. Soon as I can find brisket and pork shoulder on sale, I'm in production. This will add the last and final meat to my menu and I'll be able to do 2 and 3 meat combo's.

99% of my restaurant equiptment order came in. I'm just waiting on a couple last items. My sauces (beef and pork jus) including the BBQ Sauce will be heated now.

Soon as I get my AZ Food Handlers Card recertified, I'll be looking to find a corner to set my pop up on. I wonder if Cabelas would let me set up shop in their parking lot? (Get that s**t reserved Now before the superbowl comes next year.)

I'm just about a few weeks out from being able to go public. I've got 4 bar tables to put outside my booth so people have a place to eat. Were "almost" there. Very soon! 😁

I need to 1-up LBCo's game another notch. I need another type of meat on my USMC Carnivore Menu. I'm going to learn how to make and smoke 50/50 brisket & pork sausages. (Cuz I really want to make smoked Jalapeño-Cheddar and pork & apple sausages.)

Cuz let's face the facts.... Anything you learn to cook on your own is still HELLA cheeper than store bought food and healthier too. Plus it adds one more item to my smoker menu.

It's kind of a pain in the butt to do; however, I've got LBCo's Logo labels and the nutrician facts labels done and ordered. So, I can sell apple chips with my BBQ to the public now. Soon I'll get the Jerky labels done. Two is enough for today. One more step done to get us out into AZ State functions.

LBCo WILL be going Publicly in 2022!! That's my goal for this year. State Fairs, County Events, Farmers Markets, etc...

I did another thing. I now have my own Rep from Spiceology and if you're a Restaurant Owner, a new customer to them and willing to update your old spices with their product, they'll give you 50% off anything that you buy. So, of course I signed my life away because I LOVE Spiceology spices already!!!

And yeah, now being a "Preferred Chef of Spiceology" I have front of the line Priority Shipping and just received 29 new bottles of spice for LBCo for about $280. And I have my own Rep that I deal with "only". I tell her what I want, pay her the order and 2 days later, it's on my doorstep. 🙂 We are ready to cook now!!

My project for this weekend, I'm making and bottling about 3 gallons of my barbecue sauce. So if anybody wants to buy a pint of it for $5, I should have some ready by Monday.

I know 5 bucks is a lot of money for a pint of Barbecue Sauce, but there's about $30 worth of Bourbon in it & a pound of thick-cut smoked bacon per gallon so 3 gallons is costing me a lot of money to make it.

That's why I don't have it very often. But now that I can pressure can it and the shelf life is good for 10 years, I'm probably going to make three or four cases of it this weekend.

(**Just an update**)

I did a small 60-top wedding for a couple and they were more than happy with LBCo's proficiency. All the out of town guests there said that that was the best pork and brisket that they had ever had and a few of my regulars said not only did I make that brisket POP somehow, but I have, once again, bested my best cook and made it so much better. I always strive to try new things and tweak my recipe just a little bit. And this time I made a new Beef/Worcestershire injection that made the brisket tender, juicy POP big time. So there's a new addition to my brisket recipe.

Its time to get Leatherneck BBQ Company in full swing again. I am licensed and insured and am going to start my mobile service including farmers markets and get us out to little events here and there. The website needs to be updated and I'm going back to using my personal cell phone instead of a dedicated land line again. That will be updated on my website.

Ill post when I'm back in full operation again (not just yet) and start taking events on my calendar. I now have a super quiet Honda Generator and I can travel 300 miles max from my smoker (85037) until I get a trailer which I'm currently working on. So if you're out of town, no problem! I just did a wedding in Flagstaff, AZ. My Cambro's are only good for hot and cold holding for 4-5 hours so that's why.

So LBCo is coming back to life again. And my brisket just got A LOT better. See ya soon.

Ive got the cambro's to travel and after the wedding that I'm catering Sept 16th, I'm officially going moble within 5 hours of my smoker. So here's to a new year and new adventures with LBCo 🙂

Its been a while but LBCo is still in business. We've just been on hold thru the pandemic. Don't need some sue happy frauds blaming my food for giving them Covid.

New News, LBCo is going completely mobile. I don't have a trailer yet but thats still a couple years out and we'll have a 40' Smoker Concession Trailer rolling anywhere you want my cooking.

For now, I'm buying Cambro heating and cooling boxes so we can load up food in the truck with a pop-up and head to your event with minimal effort. (Heh, the good old days hauling that 2500 pound smoker on a flatbed trailer are no more!)

So as the world starts to turn again, I'll soon be taking more events and Leatherneck BBQ Co will be back to raising money for our Military Combat Vets on a regular basis.

I'm pretty proud!! Leatherneck BBQ Co got an offer to move in-house to a local well established bar in Chandler this weekend.

I told the couple that I'm not ready to make that kind of commitment yet as I already have a full time job and I'm not operating while Civid 19 is wreaking havoc. But who knows what might happen down the road. They said the offer stands thru 2021 if you change your mind. 🙂

On January 1st, I am officially devoting 100% of my free time to the growth and prosperity of LBCo. We are opening up a shop in an industrial park. We are buying a 20'+ enclosed trailer to go mobile across State lines. And were going to start building our online store also taking orders for custom built smokers.

January 1st is a new year and a new beginning for LBCo. Keep watching. Were about to grow! 🙂

I found some pretty cool old wheels on ebay. I need one for the grate lift on the Santa Fe flat grill. The clover is only 8 in across and I need one at least 16" to 20" in diameter. So I might have this cut out by water jet and recreated in diamond plate.

Still searching ebay for the red one though. It's a hand break wheel off a railroad car. That's the one I really want.

I've decided what barbecue that doesn't sell at my events, providing the customer didn't buy the meat, I'm going to start taking it down to the Catholic Charities MANA House in Phoenix and help them feed our homeless Vets. I'm throwing away product after events that I could use to feed hungry people and I hate throwing away food, especially if I bought it.

Once the Arizona leathernecks Clubhouse closes down on September, I can refocus 100% of my time opening leatherneck BBQ Company back up and building it bigger and stronger. I'm in the process of designing and building two new smokers (one dedicated for whole hog only) for my operation. So anyone out there looking for a BBQ Caterer for your events, I'll be ready to start booking appointments on my calendar again in November.
