Italian Cannoli-Inspired Thumbprint Cookies
Ingredients:
For the Dough:
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- Pinch of salt
- 1/2 teaspoon almond extract
For the Filling:
- 3/4 cup ricotta cheese
- 2 tablespoons powdered sugar
- Handful of mini chocolate chips
Instructions
1. Preheat the Oven:
Preheat your oven to 350°F (175°C).
2. Make the Dough:
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and almond extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
3. Shape the Cookies:
- Roll the dough into small balls, about 1 inch in diameter.
- Place the dough balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Using your thumb or the back of a spoon, gently press down in the center of each ball to create a thumbprint.
4. Bake:
- Bake in the preheated oven for 10–12 minutes, or until the edges are lightly golden.
- Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
5. Prepare the Filling:
- While the cookies are cooling, in a medium bowl, combine the ricotta cheese and powdered sugar. Mix until smooth and creamy.
- Fold in the mini chocolate chips until evenly distributed.
6. Assemble the Cookies:
- Once the cookies are completely cool, spoon a generous amount of the ricotta filling into the thumbprint of each cookie.
7. Serve and Enjoy:
- These Cannoli-Inspired Thumbprint Cookies are best enjoyed fresh but can be stored in an airtight container in the refrigerator for a few days.
