Here's a recipe for Ropa Vieja, a delicious Cuban dish:
Ingredients:
- 2 pounds flank steak
- 1 large onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 4 cloves of garlic, minced
- 1 can (14 ounces) crushed tomatoes
- 1 cup beef broth
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
- Cooked white rice, for serving
- Fresh cilantro or parsley for garnish
Instructions:
1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
2. Season the flank steak with salt and pepper, then sear it on all sides until browned. Remove the steak from the skillet and set it aside.
3. In the same skillet, add the onions, bell peppers, and garlic. Sauté until the vegetables are softened and lightly browned.
4. Stir in the crushed tomatoes, beef broth, cumin, paprika, oregano, and bay leaf. Bring the mixture to a simmer.
5. Return the seared flank steak to the skillet and submerge it in the tomato mixture. Cover the skillet and let it simmer over low heat for about 2-3 hours, or until the meat is tender and easily shreds.
6. Once the meat is cooked, remove it from the skillet and shred it using two forks. Return the shredded meat to the skillet and stir it into the sauce.
7. Simmer the Ropa Vieja for an additional 10-15 minutes to allow the flavors to meld together. Remove the bay leaf before serving.
8. Serve the Ropa Vieja over cooked white rice and garnish with fresh cilantro or parsley.
