Mama’s Hot Chicken Salad

This dish was a Christmas Eve tradition for many years. Mama said it was something easy that she could make up in advance. Everybody would arrive at different times on Christmas Eve, but this was always ready in the kitchen whenever we arrived.

Ingredients:

• 2 cups cooked chicken, chopped

• 2 cups celery, chopped, sautéed until tender

• 6 boiled eggs, diced

• 2 cans (10 ½ ounces each) cream of chicken soup

• Grated onion

• 1 cup mayonnaise

• 1 cup saltine crackers, crushed

• Extra saltines for topping

Directions:

1. Preheat oven to 350 degrees. Grease a 2-quart casserole dish.

2. Combine all ingredients together in a large bowl. Pour into a greased casserole dish, cover the top with extra crushed saltines, and bake for 30 minutes.
