CHEWY CAKE

1 pound light brown sugar (1 box)

3 eggs, slightly beaten

2 cups self-rising flour

1 stick of butter, melted

2 teaspoons vanilla

2 cups of chopped nuts (optional)

Preheat oven to 325 F.

Spray a 9x13 pan with cooking spray and set aside.

In a medium-size mixing bowl, combine flour, sugar and nuts.

Stir in eggs, butter and vanilla. Mix well and pour into pan.

Bake at 325 F for 30-40 minutes. Cool completely and cut into bars.

Store in an airtight container for up to 2 weeks. Cooked bars freeze well.

Fried – Lacy Edged Cornbread

This is one of those recipes that has been passed down through generations, but never written down. Mama has told us all how to make it, but I got her in the kitchen and together we created a written recipe. It takes practice, even with a recipe, but it’s worth it when you get it right. Best stuff ever!!

The secret to getting that lacy edge is to get your batter thin, keep your oil hot, and pouring it slowly into the pan in a circular motion. The lace comes from the residual batter spreading out in the hot grease and attached to the edges of the main bread. Serves 4-6.

Ingredients:
• 1 ½ cups cornbread mix (not the sweet kind)
• ½ cup self-rising flour
• 2 cups of water, divided
• Vegetable Oil

Directions:
1. Combine cornbread mix and flour. Add water a little at a time until mixture becomes “soupy.” We used 1 ¾ cup to begin with. You may have to add a little more water when you get to the bottom of the bowl to thin it out again.
2. Pour vegetable oil into a non-stick frying pan about a ¼ inch deep and heat over medium-high heat. Your oil needs to be very hot to crisp the edges.
3. Fill a ¼ cup measuring cup half full (1/8 cup) and drizzle slowly into grease using a circular motion to form a thin pancake shape. If the batter doesn’t spread out as you pour it, thin your batter out a little more. Cook until the edges are brown and the top of the batter is full of tiny holes. Using a spatula, turn the cornbread over and cook another minute. Transfer to a plate lined with paper towels.
4. Stir batter and repeat until batter is gone. Add water as needed to keep the batter thin. Add more oil to the pan as needed.
