When we buy our tri-tip, we buy ours with the fat on and go home and trim it ourselves. By doing this, we are able to preserve the perfect amount of fat on one side to ensure a flavorful piece of meat! When we put it on the barbecue, we lay the fat side down and sear it, which burns off the fat cap but creates amazing flavor!

Our pork is 205 degrees when we're done cooking with it and we shred it fresh!! That means using these neoprene gloves to help protect us from the heat while still having the necessary dexterity to pull apart the pork! If you make your own, I highly recommend you get yourself a pair!
