Vegetable Croquettes ,Saffron aioli ,Sweet Potato Crisp . .

This was a Vegan Dish , which was was repurposed using leftovers . The idea behind this dish was to create an elegant looking dish only using the leftovers. Sauce and Garnish everything was made using leftover food .
