CHOY!
Did you know that Choy means leafy green in Chinese? A main component of south chinese cooking (the regional chinese cuisine Steve grew up with) is leafy green vegetables. Steveās favorite choy is Sai Yeung Choy (watercress), Mattieās is Ong Choy (water spinach), and our sonās is Yu Choy (chinese broccoli). TBD on the baby.
Chef Steve works a steamed or stir-fried choy into menus on a weekly basis. If thereās an asian influence on the menu, chances are thereās a choy paired with it. Theyāre an incredibly versatile side! And even better, theyāre packed with essential nutrients. Most of these leafy greens are rich in folate, vitamin C and A and are a good source of iron. This is one of the many ways we focus on creating nutrient dense meals for our clients.

Itās been a busy spring for us - private dining experiences, adding new families onto our personal meal delivery services, private eventsā¦ and having a baby! Our little girl is now three months old. In a few months when she starts solids, sheāll be the best fed baby around š

At the start of 2018, Steve was enjoying cooking for family and friends as a hobby. With 10 years of previous experience as a pastry chef, he began to consider cooking seriously. By the spring of 2021, he left his pursuit of a law degree and full-time job to do exactly that. Now, he is bringing his love of food to your tables.
Steve was born and raised in a Chinese-Vietnamese family, where there was an abundance of food on the table. He grew up watching his grandparents as they brought their traditional recipes to life in an American setting. This passion for exploration and love of family is apparent in Steveās style of cooking. Striving to create a dynamic flavor profile in each and every dish, and using the experience of a shared meal to create a connection with your loved ones that will last a lifetime.

Salad Shirazi (Persian Cucumber, Tomato and Onion Salad) -
Named for the city in southwestern Iran, this salad is found on practically every Iranian table at practically every meal. Chef Steve loves to incorporate Salad Shirazi when a dish calls for a bright, crunchy and tart, counterpoint to a rich meal. Mattieās family is from the city of Shiraz in Iran, and he uses their family recipe (which goes back hundreds of years!) whenever he makes this special dish.

Chef Steve loves using Chinese Five Spice as a way to bring elements of Chinese cuisine into American, French, or other western styles. Chinese five spice is typically made up of five spices prevalent across the majority of Chinese cooking. Chinese cinnamon, fennel seed, star anise, and cloves. The perfect pairing for duck, pork, or even chicken.
