The purpose of why I do what I do takes me back to my childhood. Growing up as a child, me and my father would travel to Mississippi to visit my grandmother every summer for summer vacation. Upon our arrival my grandmother would already have an amazing meal hot, prepared and ready to serve. I remember as a child pulling up to the driveway and seeing two large gardens, chickens and roosters walking around. As the wind would blow a fragrance in the air of a home cooked meal. As we walked into her home to put our things away she would always lead us to the kitchen where we would find bountiful amounts of comfort food such as southern fried chicken, homemade biscuits, collard greens, macaroni and cheese, different type of sweet treats like homemade pies, cobblers and cakes. The aroma would fill the room and the excitement of being able to sit down and make me a plate. The food would be so good, everything was made from the heart. The fullness that you have to where you’re just ready to lay down with a blanket and take a long nap. It transferred over to my generation with my large family of 7 to where I would cook full course meals for every day the same way that my grandmother would make for us each time we came to visit her. The same feeling that I had as a child is like seeing the same facial expressions with my family. I also give credit where credit is due to my mother in law, Christine Davison. At a young age, she took me under her wing to show me ways on how her family from Georgia threw down in the kitchen with family recipes and life lessons.
Cooking for me is therapy, it is comfort, it is from the heart and soul and it explains and describes who I am. The reason why I wanted to open up my restaurant is so the others can feel and sense the love in my food, how I felt as a child eating my grandmother’s and mother in law’s food and how my family feels when they sit down to eat. Soul food southern cuisine is comfort food from your heart and soul and I have a lot where that comes from.
