Nothing says Spring better than 🫛 and asparagus together!

Burrata 🧀
Ditalini pasta
Frozen peas
Onion
Asparagus
Fresh Peas
EVOO
Milk to blend

Place four small buratta balls in blender with 16 oz bag of frozen peas, 1/4 cup EVOO, salt 🧂 and pepper. Blend till smooth adding milk as needed.

Start pasta. Reserve 2c pasta water near end of cooking time

Add diced onion, garlic to saute pan. Brown. Add diced asparagus and fresh peas and cook 2-4 mins. Add sauce from blender, 1 c at a time and thin with pasta water as needed. Add cooked pasta and allow sauce to reduce.

Garnish with grated Parmesan.

Can’t beat it! And great cold for lunch the next day.
