Computer illiteracy has prevented me from posting a photo of this week's coming menu! But let's not get discouraged, here it is, not-so-snazzy-looking, but typed out menu ;)

~local Redlands only for now (including businesses)! One meal is serving sized for 1 person~
Lunches:
*Tuscan Kale Salad
Fresh purple kale, shredded and massaged, then topped with kalamata olives, toasted walnuts, cherry tomatoes, marinated red onion and goat cheese feta (optional)
*Potato and Mushroom Fajita Burritos
Marinated and roasted potatoes, sautéed mushrooms, grilled onions and peppers, wrapped up in a flour tortilla with a cilantro cashew-cream sauce
*Mushroom, black rice and red quinoa pilaf
Red quinoa, black rice and roasted marinated mushrooms are all tossed together in a delicious and hearty seasoned pilaf. Served with a whole wheat pita bread on the side and a yogurt dill sauce
*Classic PB&J
Homemade peanut butter from organic roasted peanuts, seasonal marmalade or preserves on fresh whole wheat bread. Served with a side of fresh fruit and cut veggies with hummus.
Dinner:
*Sweet Potato, baked plantains and Black Beans on Cilantro Rice
Marinated and roasted sweet potatoes and plantains, tossed together with flavorful black beans and served on a bed of fluffy rice flavored with lime juice and fresh cilantro.
*Caramelized Onion, Wild Mushroom and Lentil Soup
This perfect for postpartum stew contains booster foods, protein, good fats and lots of flavor!
*Braised Tempeh with Curried Coconut Sauce
A flavorful, protein-rich dish served with a side of rice
*Crunchy Asian-Style Noodle Salad
Cold udon noodles are tossed together with shredded purple cabbage, snow peas, small broccoli florets, shredded carrots and a spicy peanut dressing
Drinks and Extras
*Mate Latte ~ ready to pour and heat on the stove, made with organic Yerba Mate tea, fresh almond milk and raw honey
*Peaceful Nursing Iced Tea ~ an herbal remedy to provide essential nutrients to your hard-working body while nursing a little one
