A few weeks ago, we hosted a local school on a tour of our catering facilities. The students were part of an enrichment class focused on cooking and were interested in seeing a working kitchen in action. Executive Chef 👨‍🍳, Dan Kiley, served as their guide and shared expert information about different areas of the kitchen, the equipment and tools, and what it is like to work in the culinary arts profession. They also walked through our executive office and met our event planners to learn a bit about the work involved in creating a catered event. The students helped make our popular Mini Ginger Molasses cookies and then enjoyed eating them! 😋 We were thrilled to have the class visit and hope they enjoyed the educational experience! Each student and their teacher went home with a copy of Chef Lisa Dupar’s book, Fried Chicken & Champagne.

We were honored to participate in last night’s Eat, Drink & Be Generous community fundraiser hosted by the United Way of King County . What a great night! Our team featured Sassafras Duck Confit with collard green cracklins and fried okra atop Carolina Gold Middlins. 😋

Did you know that middlins (cracked rice) goes way back to Old English as middlings for broken cereal grains, and later the pan cultural slang in the Colonial to 20th century South became middlins? The breaking of whole rice is traced back to the first settlement here in the U.S. The practice was Native, then African, to save fuel used in cooking because cracked rice cooks faster than whole rice.
