Our mission at Billy's Botanicals is to create a food production company that provides Savannah and the surrounding areas with fresh, sustainably raised fish and aquaponically grown produce. We join the efforts of millions who are dedicated to local, organic, and environmentally friendly farming practices. Billy and I have relocated from Richmond VA to Richmond Hill GA to start Billy's Botanicals

on a commercially viable scale. We both graduated Virginia Commonwealth University and continued to bartend because jobs were sparse through the recession. To quote Jane Fishman in her piece for the Savannah Morning News, we had to get "creative." We had always practiced aquaponics. Billy even had an entire system set up in our laundry room! It was time for us to forge a living doing what we were truly passionate about. The industrialized food system is not meeting the basic needs of it's consumers. Rather than focus on quality, they are driven by cost cutting and mass production. Miles of land stretch devoted to rows of genetically modified mono cultured super crops laced with pesticides. Huge ships run along our coastlines over fishing and polluting our water sources. This model of food production has not promoted efficacy, health, or sustainability. Billy's Botanicals uses innovative fish farming practices merged with hydroponics to raise fish and produce. The water from the fish is diverted and ran through our troughs where a large variety of plants grow. The plants are fertilized by the nutrients the fish create and in turn, filter the water. This symbiotic relationship between plants and animals works in harmony of nature, not in spite of it. We currently have a smaller system set up that house about 2000 tilapia and 5 troughs. We are nearing the completion of our greenhouse, that will house a larger system with far more plants and about the same amount of fish. We have had a lot of success at Forsyth Farmers market in Savannah where we started as vendors in March of 2014. We have gotten great feedback from our customers. Everybody loves the fish! This is a thrilling start for us and we can't wait to be in full production.

Big Billy is at the farm taking care of our littles while Ana flys up to her Oma’s long awaited burial. We hope you’ll come see Kale and Flora at for all your seafood, produce, and flowers needs.

EW! WHY IS IT BROWN!? (Gasp) North Americas largest native fruit is nearly impossible to find in grocery stores, because it has a short shelf life and begins to brown quickly. Think of the pawpaw as an overly sensitive banana. With the commute and refrigeration, they will have some brown and bruising. But we promise it’s OK! Much like a browning banana, there is fruit inside at peak ripeness. Don’t wait to enjoy though. This fruit will deteriorate in your crisper. Enjoy or process on Saturday. We have included extra in all portions to account for loss.

Did you know that in the absence of artificial lighting, chicken eggs are a seasonal product? Just because there aren’t a bounty of eggs at the market, don’t believe for a second these farmers and their hens aren’t putting in the work! Tons of factors go into egg laying including but not limited to sunlight, stress, heat, and fear of predators. It’s about all we can do between our own production and to keep our farm bags stocked, but we will have a few dozen available for the market stand this week. Carefully candling away!

Our aquaponics system slows quite a bit in the heat of the summer. Greens like kale and lettuce experience the combined stress of 100 degree plus days and pest pressure like no other time of year.

This is the perfect opportunity to lean on our gardens, that sit directly outside of our greenhouse and benefit from the nutrient rich water waste from our system. Growing in ground has come with its own set of learning curves, but this has by far been the most bountiful year for our adjacent produce and flower gardens.

Shout out to our hardworking friends & who come once a week to replant the greenhouse and make sure everything is tended too. We are grateful to you. If you see them out buy them a drink or 2, it’s hot out there!

When began our hyper local farmbag in the throws of Covid lockdown, we never imagined it would be going strong well after we all got back to normal, let alone over 3 years later. We have learned so much, worked with some amazing local growers and makers, and been introduced to some wonderful customers that aren’t able to make it to the farmers market every week (and some that do😃). There has definitely been a learning curve, but we seriously have the best, most gracious customers that value our commitment to local, organic, & sustainable practices.

Adam is so kind to return to his native Richmond Hill to bring us sweet corn, heirloom cherry tomatoes, and cucumbers from his SC farm to compliment our own greens, peppers, fish, and homemade pesto.

Summer is in full effect on the farm! Tons of fresh and related goodies at our stand.

Ps, please don’t store your fresh basil in the fridge! It will brown. It would be much happier kept on your countertop. Better yet, clip the stems and put it in water like you would cut flowers. Best enjoyed fresh, don’t leave your bouquet there too long. Thankfully this summer delight is wonderful on just about everything so surely it won’t wait around too long.

Mint, friend or foe to gardeners, is always a friend to us. Once established it simply goes nuts. We have traditional spearmint, chocolate mint, and pineapple mint growing adjacent to our aquaponic greenhouse. They benefit immensely from our nitrogen rich fertilizer naturally produced by our tilapia. At this rate, we may just become a mint farm☘️

That being said, we have everything you need this weekend for your Mint Julip needs. Tons of mint, bouquet and bags, headed to & with lots of bulk discounts available if you are hosting. Don’t forget the edible flowers if you really want to impress 🌸

We are so stoked to be back at Richmond Hill Farmers Market this upcoming weekend! The location has changed to JF Gregory and we hope to see everyone there. A few things to note:

We do not accept credit cards! Our margins are very thin for local, sustainable food production and in order to keep our prices as low as we can, we have to skip that 3-5% processing fee that cards come with. Please be prepared to pay with cash or Venmo. Many other vendors do accept cards but we do not. Thank you for understanding.

We are at Forsyth Farmers Market prior to The Hill, so we are usually more scant on produce by the afternoon. We highly recommend preordering a farmbag if you are looking specifically for local produce. Check out our form below to choose from our $50 full bag, our prepped meals, and our $25 veggie only bag.

aka has been a mainstay on our small family farm for years since she’s moved here. Whether she is coming over to help us process leftover market produce into value added products, filling in at the market, foraging on behalf of local businesses in the area, she is working hard. All this while working a full time job. Thanks to some teamwork, we were able to prep the marinade for this weeks ready made meal with & did another batch of pickles & made more ramp salt & did a vegetable broth with ramp roots & a bunch of home grown produce. Grateful to the talented people in our lives that help us get it all done.
