Wartime Ration Cookies

Ingredients:

2 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon fine salt
1 cup shortening, room temperature
¾ cup honey
½ cup maple syrup
2 large eggs, room temperature
1 teaspoon vanilla extract
1 cup chopped walnuts
14 ounces chocolate chips
Directions:

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Line two large cookie sheets with parchment paper and set them aside.
Mix Dry Ingredients: In a large bowl, whisk together the flour, baking soda, and salt. Set this mixture aside.
Cream Shortening and Sweeteners: In another large bowl, beat the shortening with an electric mixer until it becomes soft and fluffy, about 2-3 minutes. Gradually add in the honey and maple syrup, beating for an additional 2 minutes until well incorporated.
Add Eggs and Vanilla: Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Scrape down the sides and bottom of the bowl as needed. Stir in the vanilla extract.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped walnuts and chocolate chips. The dough will be soft.
Form Cookies: Drop large teaspoon-sized portions of dough onto the prepared cookie sheets, leaving about 2 inches of space between each cookie, as they will spread during baking.
Bake: Bake the cookies for 7-10 minutes, or until the edges are slightly golden. Let the cookies cool on the baking sheet for 5-9 minutes before transferring them to a wire rack to cool completely. These cookies are soft, so handle them carefully.
Storage: Enjoy the cookies warm, or store them in an airtight container at room temperature for up to 3-5 days, or in the refrigerator for up to 7 days.
