This is just an example of what is going on with food prices 😔. Our prices are going to have to be adjusted. This is not what we want to do but have to. Also our menu will be revamped.
Before we start this post, we want to make it clear that we have not raised ANY of our prices, and this also isn’t directed toward anyone, as we rarely receive comments about our pricing. This is simply meant to educate and show support for our fellow restaurant owners who are also feeling the inflation at the grocery store.
We all know the cost of groceries has gone up, but it’s not just consumers feeling the pinch. Restaurants are, too. We and so many other small business owners do everything we can to keep things affordable, but if we don’t charge appropriately, you’d quickly have no restaurants left to patronize.
For example, this is a brisket we purchased last week. When we opened 18 months ago, Prime brisket averaged around $4.20/lb. Now? It’s up to $6.38/lb. 🤯
Once trimmed, cooked, and properly rendered, that 20lb brisket has about a 40–50% yield, leaving just 8–10lbs of edible meat. That means our actual cost is more like $13/lb right off the top — before factoring in rubs, sauces, wood pellets, utilities, packaging, labor, and overhead.
In the restaurant industry, prices should be roughly 300% of cost to make a modest profit and cover the countless expenses that come with operating a restaurant.. and sometimes, that’s still not enough!
As a consumer, you might not think about these things, or even want to, but it’s the cold, hard truth. Eating at a restaurant is a luxury. A luxury that we, as restaurant owners often can’t even afford ourselves. For some, it’s a once-a-month treat; for others, it’s a few times a week. And frankly, it’s becoming more and more of a luxury for folks, ourselves included!
But just like you, restaurant owners are feeling the squeeze too, and can only absorb so much of the rising costs before some of it has to trickle down.
