National Indigenous People’s Day

“Ya existíamos”. En la escuela nos enseñaron que Cristobal Colon “descubrió America”. El énfasis en el uso de esta palabra “descubrimiento”, ha tenido de muchas formas y por siglos, un efecto de negación de la soberanía y valores de pueblos indígenas de todo el continente Americano. Actualmente, nos inspira el movimiento de “Descolonización” para no llamarle “Colombus day” pero el día de la multiculturalidad, reconociendo que la riqueza de Mexico y las Americas se basa en la diversidad de los Pueblos Indígenas. Celebrarlos es reconocer su presencia actual e histórica. Cuestionar nuestra historia es un deber constante, reflexionar en el uso peyorativo de las palabras en nuestro lenguaje, también lo es.

We love Kekas (an obvious nickname for the quesadilla). Kekas are super common in the streets of Mexico City and there are two key ingredients in this: The Corn Masa (nixtamalized and organic) and the stews inside it (all different kinds of meats with all different kinds of flavors!).

For all its complex flavor and elaborate preparation, it's the history of cochinita pibil that makes it truly Mexican. For centuries before the Spanish conquest, Mayan people made the dish with game meats such as venison and wild boar and enjoyed it early in the morning, before the regions blistering heat set in.

As part of our Almost Secret Menu Today and Tomorrow ONLY: Mayan-rooted; Slow Cooked Pork marinated in Axiote (seed), orange and other spices, wrapped in Maguey Leaf (for flavor), baked for 4 hours. Two decades ago, a group of family members decided to open a restaurant. El Huarache Azteca, in Kearns, UT was born, and with that was created a new style of food in the US.

Mexico City is a massive city with a variety of...everything! From technology, schooling, to business and major corporations that reside there. With that abundance and variety comes a quick, easy to grab-n-go, flavor-loaded “garnachas”.

The US has a threshold of Mexican food that we will be expanding as we introduce these Garnachas (Mexico City Style Comfort Food) to Utah in Herriman.
