Red bell pepper pasta:1 package of Aidells Cajun sausage (4 sausages)1 pound noodles of choice1 yellow squash1 zucchini 1 large shallot1 small container of grape tomatoes, halved1/2 cup of chicken stock 1 cup heavy cream8-12 fresh basil leaves12 oz jar roasted red peppers, liquid drained2 cloves of mixed garlic2 tablespoons of butter1 tsp tomato paste1/2 tsp salt1/2 tsp red pepper flakes1/4 tsp black pepper1/4 tsp oregano1/2 cup grated parmesan cheeseDirections:1. Put a large pot of water on high heat to boil. Once boiling add 1 pound of past and cook per instructions on the package. Strain and set to the side.2. In a blender combine chicken stock, heavy cream, roasted bell peppers and all spices. Blend on night for 30 seconds. Set to the side.3. Place 2 tablespoons of butter into a large, deep pan on medium heat. Dice the shallot, quarter and slice the squash and zucchini, and halve the grape tomatoes. Add the shallot, squash and zucchini to the pan with butter and turn the heat up to high. Season with salt and pepper to taste.4. Once the veggies are caramelized, add the red pepper sauce to the pan, bring to a boil and slowly whisk in 1 cup of shredded Parmesan. 5. Once well combined add in the Cajun sausage, noodles, and grape tomatoes and stir.6. Plate and top with a sprinkle of Parmesan and freshly cracked black pepper. Deviled Eggs1/2 cup mayonnaise1 tablespoon dill relish1 tablespoon white wine vinegar1 teaspoon yellow mustard1 teaspoon dried parsley1/2 teaspoon dill weed1/4 teaspoon salt1/4 teaspoon paprika1/8 teaspoon salt1/8 teaspoon pepper12 hard boiled eggsOptional: Fresh dill, choppedDirections:1. Place 12 eggs in a pot of cold water. The water should be at least 1 inch above the eggs. Turn the heat to high until the water starts to boil. As soon as the water starts to boil turn the heat off, leave the lid on, and set a time for 12 minutes. Once the 12 minutes is up removed the eggs from the water and place into an ice bath.2. While the eggs are cooling in the ice bath combine all of the filling ingredients in a small bowl.3. Once eggs are cooled, peel and half them. Place the yolks into the bowl with the filling ingredients and whip well with a stand or electric hand mixer.4. Egg white scramble (feeds 4 adults):Ingredients:10 eggs whites1/2 yellow onion, diced1/2 red bell pepper, diced1 Roma tomato, diced1 clove of garlic, minced2 handfuls of baby spinach2TBS butter1/2 cup shredded cheese (optional)1/4 cup salsa (optional)Salt and pepper to tasteDirections:1. Dice the onion and bell pepper2. Add 1 TBS of butter to the pan on high heat, add in the onion and bell pepper. Cook on high until they start to caramelize.3. Add in the minced garlic, spinach, another tablespoon of butter, and season with salt and pepper to taste. Cook until the spinach wilts completely.4. Reduce heat to medium and ad the egg whites. Add herb vinaigrette ingredients to a mason jar, secure lid and shake. While the flavors meld together, assemble the salad.2. Place the spinach on your plate. Crème brûlée! Great for Valentine's Day or to make a few days in advance for a party. Just FIVE ingredients!Ingredients:2 cups of heavy whipping cream1 teaspoon vanilla extract1/8 teaspoon salt5 egg yolks1/2 cup of sugarDirections:1. Put 8 cups of water in a medium saucepan on high heat until boiling. This will be used for the water bath to help steam cook the creme brûlée before they go in the oven. Preheat oven to 325.2. In a small saucepan add 2 cups of heavy whipping cream, 1 teaspoon of vanilla extract, and 1/8 teaspoon of salt. Turn heat to high and cook just until it starts to simmer. Pour into a large bowl and allow to cook for 10 minutes.3. In a stand mixer combine 1/2 cup of sugar with the 5 egg yolks and whisk in high until the color changes to a pale yellow.4. After the cream mixture has cooled for ten minutes, very slowly add 1/2 cup of it to the sugar/yolk mixture while mixing on low.5. Return the rest of the warm cream mixture to its original saucepan and slowly add the yolk/cream mixture to it while whisking.6. Place ramekins into a 9x13 baking dish and pour the mixture into each of the 4 6oz ramekins. Pop any bubbles with a paper towel.7. Add the boiling water into the 9x13 baking dish around the ramekins, being careful not to splash any water into the ramekins. Using a Pyrex 2 cup measuring cup works well.8. Bake at 325 for 40 minutes. Take out of the oven and allow them to cook to room temperature in the water bath. Once cooled to room temperature, place the brûlée ramekins into a fridge for at least 4 hours and up to 3 days.9. Remove brûlées from the fridge and top with a thin layer of granulated sugar. Torch the sugar until lightly browned and granules disappear.
