Some of our non BBQ sauces we serve with our Greek BBQ
Heads Ziki Sauce is our take on traditional tzaziki sauce but we really load ours up with with grated cucumber, Greek yogurt and imported Greek olive oil, garlic,and fresh dill. We also hit it with a splash of red vinegar. None of the store bought paste lol
Our Htipiti sauce (Greek spicy feta and grilled roast peppers) consists of roasted/grilled red peppers with a touch of applewood smoke then processed with imported Greek feta ( stay away from the domestic stuff) , Greek olive oil, and red pepper flakes.

I smoked a couple hot dogs then wrapped in ultra thin flat bread with cheese and pan fried.
Too bad I was all out of the key ingredient ..bacon
Topped with spicy brown mustard

Our signature Three Cheese Baked Mac & Cheese has been upgraded . We figured you can never have enough cheese. So in addition to hand grated smoked Gouda we mix in Monterey Jack, Cheddar, Colby and a touch of Cream cheese . Its officially a Five Cheese Mac & Cheese!
Before the cheese We start with a roux of butter, flour, heavy cream, and milk (when it starts to thicken we add a short pour of beer)
Theres a reason we sell more of this than any other side

Incredible turnout today for our BBQ comp at the Roselle American Legion
Close to 200 people showed up for our peoples choice ! Huge thanks to our public for coming out and supporting us!
Thank you to our judges for sampling 24 pieces of ribs and chicken lol . Next year we will have two tables of 6 lol.
Stone Cold Grillers provided the traditional 9:20 shot. Thank you for the delicious Whistle Pig and a great "sermon"!
And a special thanks to School of Rock Schaumburg House Band for providing a fantastic 90 min set of great music .
Congrats to Up In Smoke for their 3rd year in a row snagging the Peoples Choice Award

Coming in July..we are doing some limited edition seasonings!
We are bringing back our Roselle Red Eye Coffee Rub and also adding a fajita seasoning to our mojo dust line. Looking for suggestions for the fajita seasoning ..whoever comes up with the best name gets a few free bottles of the rub. Think along the lines of our current mojo seasonings (Head's Greek Mojo Rub and Head's Pork Mojo Rub).
These rubs will only be available from our online store for local pickup or shipping
