Apparently when you’re fasting, your body needs some salty stuff.
In Egypt during Ramadan, you would find pickles of all sorts and colors sold everywhere in the streets, I remember an old man who would sell pickles only in Ramadan and you have to go early and get some or else it will be sold out.

A Delicious Turkish dish that is very popular in Egypt & since I have Turkish roots, I know the best recipe for this dish! This recipe is more than 70 years old recipe, shared by my Grandma’s cousin, who was an awesome cook. It’s this kind of recipes that are handwritten in my mom’s recipe book, which I can barely read the handwriting so I always get back to her 😄
This dish is one of Ramadan’s popular dishes, made with chicken in a creamy walnut sauce topped with garlic, coriander and paprika, served with white rice which is cooked with the stock.
Very yummy and rich sauce, the nutty flavor along with the garlic and coriander is Divine!

Kunafa Cream Cheese in the making! Another Ramadan signature dessert!
If you didn’t have Kunafa before, you’re missing out one of the best deserts on the planet. Kunafa has a lot of different fillings, but my favorite is cream mixed with cheese! The cream makes it moist and helps the cheese not harden very fast, so you can have seconds and still enjoy the cheese melt!

Ramadan is incomplete without Qatayef or Atayef,
I don’t remember that I’ve ever had them outside of Ramadan, the dough is similar to pancakes, it’s filled, then fried and then soaked in syrup.
Everyone have their own fillings, this year we made two fillings one with crushed walnuts mixed with sugar and orange blossom and the other is filled with cream cheese mixed with a little bit of sugar, vanilla and mozzarella cheese.
So So Good!

Disclaimer! This is a long post, so you can skip to the mint limeonade Recipe at the bottom.
Tomorrow begins the most important month of the year, Ramadan! Which means we’ll be fasting for 29 or 30 days (depends on the lunar calendar) from dawn to sunset, it’s the month in which we reset and feed our souls year after year, where the whole family gather at the table each and everyday to break their fast together, sadly this year no big gatherings with family and friends.
Also please bear with my posts and pics as I’ll be taking/sharing them after sunset 😄
Ramadan far from home is definitely very different, but as a family we’re trying really hard to keep the traditions and make it as a close as possible to home, and one of those things is my mom’s Mint Limeonade, it’s a signature drink that all family and friends love. Ramadan is so popular with so many drinks like Hibiscus and Tamarind but this Limeonade is a family favorite
-Recipe: 3 Limes. 4 cups cold water. 8 Tablespoons Sugar.4 ice cubes.1/4 cup whipping cream or milk Handful of mint
-Directions:
Slice the limes thinly and put everting in a blender and blend for 5 mins or until everything is combined, strain through a mesh and enjoy the best refreshing limeonade and the cram on top!

One of the most popular Egyptian Street Food! Made with ground beef (20% fat same as meat you would use for burgers) mixed with onions and a lot of spices (everyone would have their secret blend) then stuffed in either balady bread or dough. I made it stuffed in dough which I really like because it secures all of the juices and flavors from the meat and the dough absorbs it nicely, paired with Mekhalel “pickles” and some home made fries, and you have the perfect meal!!

A good Kofta is a main ingredient in a lot of Middle Eastern dishes, and one of them is Dawood Basha! Very similar to meat balls, but it’s full of Arabic flavors and spices, this recipe is inspired by , the pomegranate molasses with the tomato sauce is a great addition to this dish.

Mini Egyptian Feast!
Molokheya (Jute plant), Keshk, Pan fried chicken and homemade sourdough pita bread!
Today I’ll share with you the recipe for the best frozen molokheya.
Ultimately, back in Egypt we would have fresh molokheya , but since frozen is the only available option plus it’s more practical , I’ve been experimenting the best way to make it so close to the fresh one.
And I’m sorry to say that you have to use ghee, using better won’t give you same result, also the best brand available in the U.S. is Montana (minced molokheya), make sure to grab the minced one ,because I’ve mistakenly got the un-minced before and it doesn’t work with Egyptian molokheya.
you’ll need: 1 thawed molokheya packet (it has to be completely melted). 3 teaspoons Fresh minced garlic, divided. 3 teaspoons coriander, divided. 2 Tablespoons Ghee, divided. 1/2 teaspoon sugar. 5 cups hot homemade chicken/beef stock (salted to your taste).
In a pot on medium heat, add 1 TBS ghee with 1 tsp mined garlic and 1 tsp coriander, stir for just 2 minutes, we don’t want to change the garlic color, add the the thawed molokheya packet & sugar, using a whisk, whisk it for 5 mins, it will start to be brighter in color, add the hot stock gradually and keep whisking till you reach your desired consistency (Personally I add the whole 5 Cups)
Keep it uncovered on low heat (never let your molokheya comes to a boil). In a non sticking pan we’ll make the “Tasha” , on medium heat add the remaining ghee, garlic and coriander and fry them till golden in color add to the top of your molokheya and enjoy the best molokheya you’ll ever have!

Our Dinner last night!
It’s always nice to take a break from meat/traditional dinner.
But it doesn’t mean that the whole family will be happy, my daughter was so mad that we’re having breakfast for dinner 😄
Growing up, this was one of my favorite,homemade sourdough pita bread, Fresh Fava beans, falafel, fries, pickled turnips, simple green salad and some Feteer with local honey and black molasses and tahini which was our dessert for the night.

Today I’m sharing with you the best Fried Shrimps Recipe or as Egyptians call it “Gambary Panne” and the secret for the flaky crunchy crust.
Fried Shrimps is a big thing in Egypt, it’s one of the most popular street food, served in fresh Balady Bread, which is so close to Pita Bread but much tastier as it’s made with rye & a drizzle of a spicy Tahini sauce, just the ultimate sandwich.
For this recipe you’ll need 2 pounds peeled and deveined shrimps,
For the marination:
- 3 Crushed garlic cloves.
- 1 Tablespoon paprika.
- 1 Tablespoon cumin.
- 1 Tablespoon coriander.
- 1/2 Tablespoon turmeric.
- 1 Tablespoon black pepper.
- 1 Tablespoon salt.
- A juice of 2 lemons.
- 1 teaspoon lemon zest.
- 2 Tablespoons oil.
- 1/2 teaspoon cayenne peppers, if you like spicy food.
Mix all of the above and add the shrimps and leave in the marination for an hour.
For the coating:
- 2 Cups flour.
- 2 Tablespoons Baking powder.
- 3 Tablespoons corn starch.
- 1/2 teaspoon turmeric.
- 1 teaspoon paprika.
- 1 teaspoon garlic powder.
- 3 eggs.
Whisk the eggs and add it to the shrimps, set aside. Mix all of the remaining coating ingredients in another bowl, dip the shrimps in the coating until very well coated and deep fry in a very hot oil until golden brown, serve with your favorite dip and lemon wedges & enjoy!

Another Grandma recipe!
Egyptian Ara’eesh b Agwa translates to Cookies with Date filling. This kind of Cookies is so popular in the Middle East, also known as “Makrouta”.
I woke up yesterday craving these cookies that my Grandma used to make, Maybe because it’s Easter and it’s so common to bake cookies on Easter. Anyways, these cookies are on of the best you could ever have, the dough is so soft made with ghee and have aromatic flavors: anise, fennel, sesame and mix of Arabic Spice (Ryhet Kahk or Mahlab) and filled with date paste and then topped with extra sesame seeds. Just the perfect bite on Easter morning!
