Winter sucks!
Chicken Chorizo IPA Chili ROCKS! Best chili ever!
Leftover chicken, chorizo, and your favorite IPA make this your new go-to chili.
I’m not a big fan of tomato-based chilis. Yes I’m aware that most chilis are tomato-based! 🤮 That was my motivation to create the best chili you’ve ever tasted!
This is a white chili that I created with leftover chicken and a few other ingredients I had on hand. Luckily A date left a few beers in my fridge which inspired the addition of a 12 oz. IPA. to be precise.
I would have liked it to be a little bit spicier so next time I’ll add more jalapeño and maybe some red chili flake for good measure.

Chicken Chorizo IPA Chili
1 pound Chicken (I used leftover rotisserie chicken)
1 pound Ground Pork Chorizo
6 oz. Onion, chopped
1 tablespoon Garlic, minced
3 Anaheim Chilis, charred, de skinned, deseeded,diced
3 medium Jalapeño, diced small
1 tablespoon ground Coriander
1 tablespoon smoked paprika
1 tablespoon chili powder
12 oz. IPA, pick any kind you like
1 cup red beans
1 cup kidney beans
1 cup pinto beans
2 cups chicken or veg stock

Char chilis. Place in Bowl. Cover with plastic wrap and set aside to steam the skins off.
Sauté onions. Add garlic.
Add chorizo and brown completely.
Add chicken. Add jalapeños, Anaheim chilies, spices. Allowed to cook for a few minutes.
Add IPA. Allowed to cook until half the liquid is absorbed, about five minutes.
Add chicken stock. Add beans. Season with salt and pepper as desired.
Cover and simmer for 40 minutes.
If your chili is a little thin add a slurry to thicken.

Wine dinner in Park City last month showcased wines. Dinner included imported cheeses, charcuterie, scallop w/ Yuzu & lime, chorizo fennel pasta with pink prawns, gazpacho with herb tomato topped halibut, tomahawk steak, chocolate creme brûlée!

15-minute No-Fail Mac and Cheese
This Mac and cheese is luxurious and silky. Packed with flavor. It’s hard to stop eating it! Try it for dinner tonight. What’s your favorite Mac and Cheese?
Mac and Cheese recipe-
2 Tablespoons Butter
2 Tablespoons All -Purpose Flour
1 Tablespoon Garlic, minced
2.5 cups half and half or milk/heavy cream
1 cup Mozzarella, shredded
1 cup Parmesan, shredded
Salt to taste
White Truffle Oil to taste
1 pound Pasta
Boil pasta. Strain. Set aside.
In a pot, melt butter and flour. Whisk until cooked. Add garlic and cream.Stir.
Allow to simmer.
Add cheeses and salt.
Add truffle oil to taste.
Toss pasta in sauce
Serve with grated Parmesan and a drizzle of truffle oil!

I’m Italian so this is a no-brainer for me!! Gelato all the way! Not even a question. Don’t get me wrong- I’ll eat ice cream in a second. But given a choice- gelato. Which do you prefer? Don’t leave me hanging…. What’s your favorite flavor? ·

27 Second Dressing! Here it is!!! You asked for it hundreds of times and finally I'm sharing it!!! The flavors are interchangeable. What does that mean? It means if you don't like basil, use a different herb that you do like- if you don't like berries, omit them and try citrus. There are a million plus different dressings you can make from this basic, no-fail 27 Second Dressing!! Try mixing up the ingredients and post your experiments below! Come on!! You can do this!!! I believe in you!!!

Love oysters? I hated oysters until I tried one this way. Juice 1 Green Apple. Juice 2 Jalapeños Add 3 tbsp Yuzu. Soak precooked tapioca pearls in juiced liquid overnight. Time to eat? Shuck oyster. Top with 1tsp tapioca pearls. What does your fave taste like? ·
