Whether you stayed stuffed in bed this morning or went out shopping for Black Friday Deals, one thing is for certain... there will be Thanksgiving leftovers in your near future!

Here are some ideas to take the boring out of the leftover bird...

Soup / Chili / Stew - the crock pot is your friend!

Chili - most everyone is familiar with the tomato and beef version, but do you know chili's green cousin? Shred turkey with tomatillos, green peppers, salsa verde, and white beans for a tasty treat. This is great served with leftover potatoes or rolls.

Soup - as it's finally getting cooler, soup is a great option. Use the turkey bones to make a broth and add turkey, veggies, and rice or noodles for a complete meal. You can also use leftover squash or sweet potatoes to make a sweet and creamy creation.

Think Ethic -

Egg Rolls and Dumplings - wrappers are easy to find at any supermarket. If it tastes good together on a plate, it will absolutely taste fantastic fried in dough!

Quesadillas / Tacos / Burritos - dice or shred turkey and veggies to use as your filling in any flour or corn shell. Add taco seasoning, beans, and cheese... yum!

Anything goes for Brunch -

Stuffing Waffles, Grilled Cheese with Cranberries and Turkey, Quiche with Veggies, Mashed Potato Blintzes or Croquettes. There are no rules to brunch... except maybe that you should include a Cranberry Mimosa

To make tomorrow a little less chaotic, here is a list of things you can do today:

-make any dips and sauces.
-prepare your stuffing or dressing
-set the table
-chill beverages
-cut and prepare vegetable and side dishes
-defrost bread, pies and desserts that were in the freezer
-put your feet up and enjoy the rest of the night.

Now that your turkey is defrosted, today we will answer the age old question... To Brine or Not To Brine? Brining will help you cook the most succulent turkey you've ever had... and the smartest, easiest way to do it is with a dry brine. Even if you're hosting Thanksgiving for the first time, this technique will make you look like a pro.
When you're dealing with a large piece of lean meat, it's easy to overcook.
Brining the bird in salty water, is a way to inject both flavor and moisture, but who needs that mess? Instead, dry brine by rubbing salt and seasonings directly on the bird and let the meat rest in the refrigerator. The advantages? The turkey is prepped ahead of time, There's no sloppy water, No special equipment is needed, and you get crispy skin

I think we can all agree that it has been a stressful few weeks. We'd like to suggest a Boodle Fight for Thanksgiving... it's the tastiest argument to have.
(The term “Boodle” refers to the food itself, and “Fight” denotes the competitive, all-in nature of the feast, where everyone eats together, regardless of rank or status. This Filipino tradition has since transcended military practice and has become a popular way to celebrate various social gatherings.)

Let the mighty defrost begin!!! There are 2 good ways to defrost a turkey...

Refrigerator: The safest method, but it takes patience. Plan for one day for every 4–5 pounds of turkey. Make sure to put your turkey in a deep pan to catch any drips.

Cold water: This method is faster than the refrigerator, but requires more attention and is quite a bit messier. Submerge the turkey in a sink of cold water, leaving it in its original packaging. Change the water every 30 minutes. Allow 30 minutes of defrosting time per pound.
