Y se acaba una era de esta increible mujer, la soberana más longeva de la historia. Nunca fue preparada para ser reina pero el destino le cambió la vida por completo con la abdicación de Eduardo VIII. No fue a la escuela, siendo una niña, su madre le enseñó a leer y sobre etiqueta real. Más adelante, su educación se abrió a leer y escribir, francés, piano y baile impartidos por tutores e institutrices en casa. Cuando subió al trono y fue viendo todas las diferentes responsabilidades que tenía, calladita pero empezó a tener diferentes tutores que con el pasó del tiempo ya eran mentes brillantes en el área de historia europea, historia de Estados Unidos e historia bíblica. Se dice que siempre lamentó no haber tenido una formación y conocimientos más amplios. Es admirable todo lo que hizo, los sacrificios que hizo y decisiones que tomó por el bien de la corona británica. En mi opinión personal esta era va a cambiar y esta nueva va a actualizar la monarquia para un mundo moderno. Reduciendo el número de miembros de la familia real al igual que reduciendo las multiples propiedades en donde viven para también abrirlas al público. Antes cuando se presentaba en sociedad a los herederos de la corona siendo niños, siempre se les referia como príncipe o princesa tal. Ahora , hace apenas unos días los Duques de Cambridge William y Kate llevaron al principe heredero George a Wimbledon por primera vez, lo presentaron con toda la gente simplemente como George. También William y Kate se mudan del Palacio de Kensington a una casa de 4 recamaras en Windsor y sin servicio doméstico viviendo ahí ya que no hay espacio. Los niños van a ir a la misma escuela y quieren llevar una vida más normal, sin todos esos protocolos. Todo un legado el que deja la reina, bueno y también es mi Reina y me duele su partida pero que orgullo haber tenido una reina como ella!!

Easy Mexican Recipe....
Tilapia Fish:

Ingredients
Tilapia:
4 tilapia fish fillets (whole or loins only)
2 minced garlic cloves
1 lime juiced
2 tablespoons Mexican chilli spice (hot or mild)
1/4 teaspoon salt
1 tablespoon olive oil

Beans:
1 cup drained canned black beans
1/2 cup Restaurant Mexican salsa
1/4 teaspoon salt

Assemble
2 cups cooked lentils
1 batch of Mexican salsa
1 batch of Mexican Guacamole
Sour cream (optional)
Grape tomatoes (optional)
Sliced jalapeños (optional)

Instructions
1. Using a food processor, prepare the Mexican salsa and the guacamole

2. Toss the fish fillets with all ingredients except for the olive oil. Rub the spice, garlic and lime well into each fillet for flavor.

3. Heat up a skillet over medium-high heat with the olive oil, and when hot, add the tilapia fish.
Let the fish sear on one side for 6 mins, flip the fillets and let them cook for another 6-7 mins, and then flip them one last time.
Turn off the heat, cover the pan and let the fish stay in the pan for 2-3 mins more (this ensures perfect done-ness).

4. In the meantime, prepare the bean mixture. Mash up the black beans roughly using a fork in a bowl, season them with salt, and toss them with the salsa mixture while gently mashing to your desired texture.

5. Assemble the plate by mounting some cooked lentils, top them with the bean mixture, and top that with more salsa.
Place the fish fillet next to it and then surround it with some salsa, guacamole and your favorite condiments.

Recipe Notes
Make sure to rub the spice mixture into the fish for maximum flavor.

Homemade salsa and guacamole taste best but you can use store-bought as a short cut.

Serve this pan-fried tilapia with any grain or legume you like. Quinoa, brown rice, lentils, or white rice... anything goes.

Easy Mexican Recipe....

Mexican Street Tacos:

INGREDIENTS:
2 tablespoons reduced sodium soy sauce
2 tablespoons freshly squeezed lime juice
2 tablespoons canola oil, divided
3 cloves garlic, minced
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 1/2 pounds skirt steak, cut into 1/2-inch pieces
12 mini tortillas, warmed
3/4 cup diced red onion
1/2 cup chopped fresh cilantro leaves
1 lime, cut into wedge

DIRECTIONS:
1. In a medium bowl, combine soy sauce, lime juice, 1 tablespoon canola oil, garlic, chili powder, cumin and oregano.

2. In a gallon size Ziploc bag or large bowl, combine soy sauce mixture and steak; marinate for at least 1 hour up to 4 hours, turning the bag occasionally

3. Heat remaining 1 tablespoon canola oil in a large skillet over medium high heat. Add steak and marinade, and cook, stirring often, until steak has browned and marinade has reduced, about 5-6 minutes, or until desired doneness.

4. Serve steak in tortillas, topped with onion, cilantro, salsa and lime.

Easy Mexican Recipe....

Tostadas with tuna, pineapple and red onion:

Easy tuna Mexican style tostadas that you can enjoy in minutes.

Serves: Serves 2

Ingredients:
one large lime, juiced
one to two seeded and finely chopped habanero peppers, optional or use a milder chili like jalapeño
¼ cup of finely chopped purple onion
¼ to ⅓ cup of finely diced fresh pineapple
large handful of roughly chopped fresh cilantro
two small or one large can of tuna, drained (either tuna in water or olive oil will work)
fine sea salt, to taste
store-bought tostadas (or make your own by frying corn tortillas until crispy)
additional toppings: slices of avocado

Instructions:
Pour the lime juice into a bowl then add the chopped chili and onion and allow it to sit for 5 minutes.

After this time add the pineapple bits, chopped cilantro and the the drained tuna. Give the ingredients a good stir then sprinkle in a pinch of fine sea salt.

Again mix the ingredients well then taste and see if either more salt or lime juice needs to be added.

You can allow the tuna mixture to sit for 10 minutes in the fridge (or until ready to serve) or serve straightaway -- but allowing it to sit allows the flavors to really come together.

Once you're ready to serve simply scoop and spread the tuna mixture over a tostada. Serve straightaway to avoid the tostadas becoming soggy and breaking apart.

Easy Mexican Recipe....
Tlacoyos:

Tlacoyos are thick corn dough tortillas in an oval or rhomboid shape, usually filled with beans, pork cracklings, or fava/broad beans. They are served topped with salsa, cheese, cilantro and toppings of your liking. Toppings are practically endless.

Ingredients:
1-1/2 cups of masa harina corn flour for tortillas
1-1/2 cups of warm water
1/4 teaspoon of salt
1 piece of plastic to form the tlacoyos
3/4 cups of mashed black beans
2 tablespoons of vegetable oil or lard
1 cup of green or red salsa.
1/2 cup Cotija Cheese or Mexican crumbled cheese
1/2 cup white onion finely chopped
Variety of toppings you might like such as chorizo, potatoes, pork, chicken, etc

Instructions:
First, mix the cornflour with the water and salt in a medium bowl. Mix well to form a smooth dough. Knead it for a few minutes until it feels soft. Divide the dough into 6 pieces and cover with a wet cloth/napkin. Heat a griddle/comal over medium heat.

Grab one of the dough pieces and roll between your hands. Place on the sheet of plastic and pat with your hands to form a thick circle.

Spoon about 1-1/2 tablespoons of the bean paste in the center of the circle. Do not add more beans than needed, as they might leak if you add too much.

Fold the circle to seal the edges, forming a half moon/empanada shape. Then, with your two hands, hold the Tlacoyo and gently press the ends to form the pointy tips on each side. Place back on the plastic and pat with your fingers to flatten the Tlacoyo.

Place the Tlacoyo in the already hot griddle/comal and cook each side for about 2-3 minutes, depending on the thickness. You can add the oil or lard at this time, or warm the oil/lard in a separate skillet and then slightly fry the Tlacoyos afterward. It will take about 1-2 minutes to fry each side of the Tlacoyos. Some people deep fry them, but in this case, we’re just giving them a slight pan frying.

To serve, top with toppings of your choice, salsa, crumbled cheese, and chopped onion.

Notes
Have a small bowl of extra water available to moisten your hands and the dough while working with it. If the dough feels dry, add more water, a tablespoon at the time.

The method proposed here to shape the Tlacoyos is a little different than the traditional way making the process easier.

Spanish pronunciation: [po'sole] (from Nahuatl languages: pozolli , meaning "hominy"), is a traditional soup or stew from Mexican cuisine. It is made from hominy with meat (typically pork, but possibly chicken), and can be seasoned and garnished with shredded lettuce or cabbage, chile peppers, onion, garlic, radishes, avocado, salsa or limes.

Known in Mesoamerica since the pre-Columbian era, the stew is today common across Mexico and neighboring countries, and is served both as a day-to-day meal and as a festive dish.

Camarones al Tequila (Shrimp with Tequila sauce):

Makes 4 servings

TOTAL TIME
20 min

INGREDIENTS

1 1/2 pounds large shrimp in shell (21 to 25 per pound), peeled and deveined.
1 Teaspoon kosher salt.
2 Tablespoons unsalted butter
1/2 Cup of tequila preferably reposado
3/4 Cup Mexican Cream or sour cream
1 Scallion, thinly sliced.

PREPARATION
1. Toss shrimp with kosher salt and 3/4 teaspoon coarsely ground pepper.

2. Heat butter in a 12-inch heavy skillet over medium-high heat until foam subsides, then sauté shrimp, turning, until pink and just cooked through, 3 to 5 minutes. Reduce heat and add tequila, then increase heat to medium-high. Tilt skillet over gas burner to ignite tequila (or ignite with a long match; use caution, as flames may shoot up high). Cook, shaking skillet gently once or twice, until flames subside. Remove from heat and stir in crema or sour cream.

3. Sprinkle finely chopped scallion before serving.

Serve with Mexican white rice as a side

Tamales...

Tamales originated in Mesoamerica as early as 8000 BC.

The Aztec and Maya civilizations, as well as the Olmec and Toltec before them, used tamales as easily portable food, for hunting trips, and for traveling large distances, as well as supporting their armies.

A tamal is a traditional Mesoamerican dish, made of masa or dough (starchy, and usually corn-based), which is steamed in a corn husk or banana leaf.
The wrapping can either be discarded prior to eating or used as a plate.

Tamales can be filled with meats, cheeses, fruits, vegetables, chilies or any preparation according to taste, and both the filling and the cooking liquid may be seasoned.
