John brought together at the event two of the world's top experts on cheese. Caroline Hostettler is a world-renowned Alp cheese expert and Francis Percival who co-authored the ultimate book on cheese, "Reinventing the Wheel, and shared an insightful lecture on the future of cheese in a changing world.
The event was another in a series Sigona's Farmers Market puts on to educate and have fun with their customers on some of the more exceptional things in life – like fine cheese.
At one corner was Caroline bringing "Alp Sprinz AOP 2016 from Switzerland. The cheese wheel, made by Paul Barmettler, one of eight remaining Alp Sbrinz producers in the world, used a combination of milk from his own "Original Braunvieh" (brown cow) along with 140 more red and brown cows from 7 local farmers. Paul ages his cheese in a unique cellar at 99% humidity that develops an unusually beautiful rind and excellent flavors. Sbrinz is claimed to be the oldest European cheese. The Celtic ancestors of the Swiss were making cheese centuries before the birth of Christ.
At the other corner was Francis Percival who represents "Parmigiano Reggiano Brown Cow" from Valserena, the oldest dairy in the Parma district in Italy, and is one of the few farmsteads that all their milk comes exclusively from their herd made up solely of the rare Sola Bruna (brown) cow that produces milk particularly rich in butterfat. The cheesemaker at Valserena uses a bit more fat that gives the cheese a richer flavor and creamier texture.

Our in-house winery Woodside Vineyards, is the oldest bonded winery in San Mateo County, going back to 1963, and is licensed to grow and convert winegrapes into wine and sell to local upscale restaurants and markets.
For Event planners who want to include liquor (Spirits) at an AutoVino event, a different license is issued by the California Department of Alcoholic Beverage Control (ABC). Our bartending partners provide that in a professional manner.
On the day of the event, we surrendered our alcohol license (to make and sell wine) to a pre-selected bartending service hired for the event. Our bartending partners provide everything needed for complete beverage service.
