Happy Friday! Today, weโ€™re highlighting Tom, our former executive chef and one of our BZC family all stars! ๐ŸŒŸ Tom officially retired a few years ago after an amazing 31 (!!!) years with us, but weโ€™re lucky enough to still have him working part-time in the kitchen, bringing his signature touch to every dish.
โ €โ €โ €โ €โ €โ €โ €โ €โ €
Growing up in Oklahoma as one of nine siblings, Tom discovered his love for cooking while whipping up meals for his brothers and sisters. He made his way to SF in 1981 and soon after met Betty at an event at the . Tom still remembers the very first dish he plated for BZCโ€”quail with pureed beet! After a sweet stint as a pastry chef at (where his chocolate cake became Bettyโ€™s fave), Tom joined us as BZCโ€™s very first executive chef, carrying on Bettyโ€™s legacy and crafting every single custom menu until he retired.

With 35+ years in the SF event scene, Tomโ€™s favorite venue? The iconic (though SF City Hall comes in as a close second). We couldnโ€™t be more grateful for everything Tomโ€™s done to shape BZCโ€”we wouldnโ€™t be who we are today without him. Cheers to you, Tom! ๐Ÿฅ‚ Hereโ€™s to more memories and great food together!

Today weโ€™re throwing a big shoutout to Mark, the legend whoโ€™s been rocking with Team BZC for 25 years! Originally from sunny LA, Mark made his way to SF over 40 years ago after traveling across the country. It was here that he owned his own restaurant for 14 years before finding his calling in the catering worldโ€”and lucky for us, he never looked back. ๐Ÿ™Œ

Markโ€™s been our go-to guy as Facilities Manager for the past 18 years, and while heโ€™s officially retiring this year, weโ€™re thrilled heโ€™ll still be with us part-time (heโ€™s not quite ready to give up the catering magic yet ๐Ÿ˜‰โœจ). His favorite part of the gig? Helping create unforgettable memories for our guests alongside an awesome team.

As for retirement, Markโ€™s excited to spend more time with his lovely wife and volunteer at the Mission Cultural Center, helping with their incredible Carnival floats. Heโ€™s mentored so many of us over the years, and we couldnโ€™t be more thankful for everything heโ€™s done for BZC.

We love to put our own spin on an iconic dish. This โ€œNobu-styleโ€ halibut is a recreation of Chef Nobuโ€™s famous miso black cod, with a BZC twist. We nestle this white miso-glazed halibut on top of scallion risotto, shiitakes, & bok choy, and topped with crispy, frizzled sweet potato.

Setting our tables next to Rodin's statues feels like a real privilege, and it really gets our creative juices bubbling to design our setups to vibe with the amazing art that surrounds them. We wanted to take a second to highlight one of our favorite local orgs, . This summer was our third year participating in their program, which offers paid work experience internships to local high school students. This year we were lucky to be paired with Daniel, an enthusiastic graduating senior who joined our warehouse operations team for the summer. Wesley, our DOO, put together a comprehensive work experience program for Daniel, which covered all aspects of running a small business, from sales to BOH operations. โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹We want to thank EFY CEO, Carlo, for stopping by our kitchen to check in on Daniel's progress, and we wish Daniel the best of luck as he starts his first semester at San Jose State. We had an incredible time and will cherish the memories forever. Many of the guests raved about the food (and drink!). HUGE NEWS!โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹โ€‹After three years as BZC's Executive Chef, our very own Dan Filice is hanging up his apron to take on a new role as our General Manager. While we'll miss having Dan in the kitchen every day, we know he'll bring the same passion for planning and love for the energy of event work to his work as our GM. Don't worry, you'll still be seeing Dan out at events--we can't keep him away!

Stay tuned for more information on our new Chef, who just happens to be someone from Dan's past life, and a Michelin-starred restaurant alum.

B&Bโ€™s wedding day was centered around family, games, dancing, and, of course, good food. They wanted their menu to reflect the diverse flavors of San Francisco, and we were happy to meet the request. We served a range of dishes from many cuisines, but, unsurprisingly, sliders were biggest hit of the night!
