I majored in both management and human nutrition in college and come from three generations of restauranteurs. I own a private chefing and catering business called The Kitchen Door in beautiful Orange County CA. I spe

cialize in holistic (food as medicine)cooking, Conscious Nouvelle cuisine and Rustic Baking. I have taught at The Art Institute's International School of Culinary Arts and an expert on sustainable, local, organic and wild foods. Introduce your kids to new foods..and keep presenting it to them! If they don't like what is on their plate...then they can fix themselves a cheese sandwich! It is ok for them not to care for one or two things...but preparing different foods for everyone based on "pickiness" is going to work against your kid now and into the future...

In 1960 Arvid Petersen opened the Danish Mill inn in Solvang. He was a formally trained pastry chef from Denmark who served the royal family. He joined forces with the owners of the original bakery in Denmark, moved to United States and opened his bakery here. As a little girl, nearly once a year my mother and father would bring us to the sweet little village and my mother would insist on dining. They used to have a dining room but unfortunately do not anymore. If there was something my mother insisted on having every time, it was a piece of Arvid's cake. He named it the Dane cake. This is my inspiration for my cakes. They're commonly referred to as naked cakes. They are dressed with dolce crema, mousse, pastry cream, and soft meringue buttercream. They're very rustic and appearance and often will have fresh fruit or nuts in or on the cake. They are stacked with very delicate and moist sponge cakes and are very lightly sweet unlike the heavy duty sweetness of a typical party cake. Taking this inspiration, I call my cakes Santa Ynez barefoot cakes. This cake pictured is a three-layer coconut cake with passion fruit mousse, coconut meringue buttercream and fresh raspberries. We very proudly served this cake garnished with pansies tonight at a micro wedding right here in Carpinteria.

When the Sweeney's reached out to us several months ago to cater the meals for their 25th anniversary trip to the Central Coast, we were more than happy to serve them! What is even more special is they requested a very unusual cake we never before made... A triple layer German Chocolate and Gingerbread cake with Cheesecake Cream. We have properly now dubbed it the "Sweeney Cake"

Preparing today for a wedding event tasting. It is customary for larger special events like weddings, baptisms, bar mitzvahs etc for the caterer to provide a tasting of assorted items from the selected menu. It is the policy here at The Kitchen Door when we have major events, we do this on a complimentary basis provided the party has booked the event formally. All caters for major events should be willing to offer a tasting. This gives the clients an opportunity to get to know the caterer, taste the food that will be produced for their guests, and observe the facility where the food is to be prepared. We love feeding people with every fiber of our being and so happy to be doing it here on the beautiful California Central Coast!
