People often ask us, “What is a dosa and what are dosas made of?” Dosa are very thin, savory crepes that are common in South Indian cuisine. They are made from a batter of ground and fermented rice and lentils. Dosas can be eaten plain or with a variety of savory fillings like spiced potato, chicken, egg, etc. and often paired with chutneys and a soup called sambar. They are also great for any meal and can be eaten any time of day! Chef Dhiru has a special New Mexican variety with green chile and cheese! Yumm!
