✨Holiday Pairing featuring Pumpkin Risotto and Walter’s Vineyard Pinot Noir ✨

Ingredients:
1 large yellow onion, finely chopped
4 cloves of garlic
4 cups of arborio rice
8 to 10 cups of veggie broth or stock
1 can of coconut milk
1 1/2 cups of pumpkin purée
1 cup of Paradise Ridge Sauvignon blanc
Freshly grated Parmesan cheese to taste, I always like a little extra
6 tablespoons of unsalted butter

Cooking instructions:
1-In a sauce pan, warm veggie broth with coconut milk if you prefer not to use coconut milk substitute with heavy cream.
You want to get the broth to a warmer temperature.

2-Grab a large skillet and heat 2 to 3 tablespoons of butter over medium heat and add your chopped onion and sauté until translucent with salt add minced garlic and cook with onion for one to two minutes. Add your arborio rice and toast on medium heat for 3 to 5 minutes string consistently.
Pour in your Paradise Ridge Sauvignon Blanc and cook it until all the wine has been absorbed into the rice.

3-Add the warm stock one ladle at a time to the risotto as the liquid is absorbed keep adding more of the broth. This is what’s most important is that you consistently stirring your risotto as absorbing the broth mixture.
This can take anywhere between 25 to 35 minutes.

4-Add in your pumpkin purée and more butter add in your Parmesan cheese and stir and once all the liquid is absorbed, you’re ready to plate..
5-If you love mushrooms, and you love them with Pinot this is a great option for a great holiday pairing the Shiitake mushrooms and arrange on a pan flat with sage and coat them with olive oil and salt and roast at about 375° for 7 to 10 minutes.

6. Garnish with sage and drizzle of olive and enjoy!
