Piece of Cake Wedding Planning is a Minnesota-based wedding planning company, providing personalized full service planning, partial planning and wedding management for couples who want to live in the moment on their wedding day. VE. I’m that odd person staring at couples so happy and in love, wondering what their story is, and just being thrilled for them that they have one another. That’s why I love being a part of the wedding planning process with couples and helping them on the most special day of their lives! I worked in public relations for six years, focusing on event planning and ex*****on. I love events; that I always knew. When I planned my own wedding more than five years ago, I fell even more head over heels in love - not only with my now husband, but with wedding planning. I wanted to be a wedding planner for others, and I started to make it happen thanks to some amazing couples who have invited me in to be a part of their day. I love being on this journey with couples; taking care of every detail so they can enjoy every second of their wedding. I’d be honored to help with your special day! These two are such a kind couple; they love laughter and fun and just want their wedding day to be a good time! They met in college at an RA meeting and instantly connected. They got married this evening with the sunset and were so excited to celebrate with their nearest and dearest!

Happy Wedding Day, Grace and Mark!

These two met 7 years ago while teaching people with disabilities how to water ski. They both slalom ski competitively, love summer and bonded over their love of the water! They’ll start their wedding day with a morning swim together, then a picturesque ceremony overlooking the lake, a celebratory boat ride after they’re married, and their whole special day will take place at their family’s lake home. It’ll be a glamorous celebration with many personal touches, and they both can’t wait to have their whole support system together celebrating with them!

Happy Wedding Day, Collette and Joe!

These two have been together for 13 years, share two beautiful kids and are so excited to officially be married! They wanted help driving wedding details and design items forward given their busy schedules, and we loved planning with them! They are one of our complete planning couples, so we got to know them well, and they are just salt of the earth people who were a joy to plan with!

These two wanted a rustic and outdoor, yet romantic and family-friendly environment, which led us to their venue. We focused on colors of burgundy, navy, blush and ivory, with wood and greenery accents, for their florals, candles and décor, which they love and compliments the venue setting. This design feels very much like them and combines their casual style with wedding elegance! Paired with a dessert bar, photo booth, and an awesome dance, it’s going to be an inviting, fun, perfect day with their loved ones, exactly what Collette and Joe wanted!

Happy Wedding Day, Rachel and Alec!

These lovebirds met through mutual friends. What started as a night out in Uptown, ended with a skee-ball game and a connection that couldn’t be denied. The rest is history! They love to travel together and exploring new places is their passion, sometimes with their fur baby, Bo! Alec proposed to Rachel during one of their many adventures- during a sunrise walk along the North Shore on their 5-year anniversary! And now here we are!

This amazing couple has a beautiful day planned for their loved ones, and it’s been a joy to help them bring their wedding vision to life! They’re featuring colors of slate blue and terracotta, with accents in white and amber. They’ve incorporated so many personal elements as well, including a beautiful ceremony officiated by a dear friend that’s going to be a tear-jerker. We’re so excited for this beautiful day!

Happy Wedding Day, Cassidy and Ryan!

These lovebirds met in high school, and then reconnected when they both ended up going to the same college. They’ve now been together for 4 years - almost to the day - and are so excited to be married! They love to visit Duluth, and that’s actually where they got engaged! Cassidy and Ryan love to cook, play cards and hang out with their dog, Rocky. They’re excited to tear it up on the dance floor and celebrate with all of their loved ones!

We’re rolling right into the 2024 season, and celebrating these two with a winter wonderland camp wedding! Meredith & Cam attended a camp wedding that they loved, and these outdoor enthusiasts knew they wanted to do that for their wedding weekend! It’s going to be magical and perfect for these two with cozy lodges and fires, an ice bar, a sauna, a music room, dreamy candles, and stunning florals in hues of aubergine, maroon and soft pink. They’ll end the night with a polka band, perfect for these polka lovers!

These two were even engaged amongst the outdoors - while gardening! This gracious, kind couple is so excited to have all of their loved ones gathered together and just having a great time! Happy Wedding Day, Isabella and Michael!

These love birds have been together nearly 5 years and are ready to throw a true-to-them party with all of their loved ones! Their first date turned into hours of conversation, and they both said love sparks were already flying! These two are so loving and respectful to one another, and it was a joy to plan their special day with them! It was extra special since Bella is also a member of the POC team!

Their wedding is going to be gorgeous, with striking designs in black and white, with magenta and greenery accents. Add in candles and disco balls, we’re ready for an elegant NYE bash! They incorporated so many personalized elements and things they love, like custom music pieces and song choices, ice cream for dessert, and their fur babies, Egg and Fridge, will be onsite enjoying as well! Hi - I'm Erica, owner and planning director of Piece of Cake Wedding Planning! Congratulations on starting your wedding planning journey! I know you have a lot of choices when it comes to choosing a wedding planner, and I believe selecting someone who connects well with you and your partner is key. So here’s a bit about me. I love LOVE. I’m that odd person staring at couples so happy and in love, wondering what their story is, and just being thrilled for them that they have one another. That’s why I love being a part of the wedding planning process with couples and helping them on the most special day of their lives! You and your partner should be the guests of honor on your wedding day, not the hosts. And I help make sure of that! I’ve planned events professionally since 2009, everything from country music festival sponsorships to kids’ triathlons. I planned my own wedding in 2012, and my only regret is that I tried to act as my own planner and coordinator. I missed out on so much because I was handling logistics. Nope! I merged my love of events and passion for the wedding industry into one, and vowed to start my own wedding planning company one day so that no bride or groom would feel how I felt - like they missed out on their day because they were conducting it. The next few years involved my keeping my day job in PR and helping friends and family with weddings on the side. Fast forward to 2017, I finally launched this company and never looked back! Piece of Cake is my passion, meaning my couples and the work I do is my passion as well. I keep my promise every day - making sure my couples get to enjoy their wedding day and planning journey!
