Glamorous Rainbow Fruit Pie
**Ingredients:**
**For the Crust:**
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup ice water (more if needed)
**For the Filling:**
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
- 2 cups diced fresh fruit (kiwi, mango, pineapple, peaches)
- 1 tablespoon lemon juice
**For the Topping:**
- 1/2 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- Edible glitter or sprinkles (optional, for extra glam)
**Instructions:**
1. **Prepare the Crust:**
- In a large bowl, combine the flour, sugar, and salt.
- Add the chilled, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together.
- Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
2. **Preheat and Prepare:**
- Preheat your oven to 375°F (190°C).
- Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim any excess.
3. **Make the Filling:**
- In a large bowl, whisk together the sugar, cornstarch, cinnamon, nutmeg, and salt.
- Add the mixed berries, diced fresh fruit, and lemon juice. Toss until the fruit is well coated.
4. **Assemble the Pie:**
- Pour the fruit filling into the prepared crust.
- Decorate the top with extra pieces of dough if desired (lattice or shapes).
- Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
- Let the pie cool completely on a wire rack.
5. **Make the Topping:**
- In a medium bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread or pipe the whipped cream over the cooled pie.
6. **Add the Glam:**
- For an extra touch of drag queen fabulousness, sprinkle edible glitter or colorful sprinkles over the whipped cream.
Tips:
- Use fresh, ripe fruit for the best flavor and color.
- You can add a few drops of food coloring to the whipped cream for an even more vibrant look.
- Serve the pie with a side of sparkling beverage to complete the glamorous experience.
