Things got busy and I forgot to share my kimchi making. It turned out great! Great combination of spicy slightly sweet notes and a bit of crunch. We have been enjoying it with everything this week. Who else would like to try?

2 weeks post trip and we are definitely still reflecting on all we got to experience. I tried to capture the second half of the trip in these photos and it still doesn’t show enough. We visited my moms hometown and learned some deep family history. We tried so many foods and new flavors. We enjoyed cultural villages, theme parks and beaches. Now to use this information and to create some amazing food for everyone. Stay tuned I have some new recipes and flavors to share.

Last day in Korea. Packed and ready to head to airport. I didn’t share the days 5-11 but I plan to recap everything once home. The trip was busy and a huge learning experience. I’m so grateful for the time we had here. Stay tuned…

Day 4: walked more of Seoul including learning about the large wall and the gates that use to enclose the city. Stayed in a traditional Hanok and experienced the real Korean home experience. Day 5 and 6 next…

Days 2 and 3: filled with more fun adventures. Lots of street markets and food vendors. Grand children’s park and more. It’s so hard to share everything.

Day1: hanboks, picture with Master of the Guards at the Palace, walking alleys filled with shopping, lots of food, small restaurants filled with people, street markets and more. Missed my first post. We made it to Korea. It was a long flight and long first 24 hours but we made it all in one piece.

Some updates: I know I haven’t posted in a while. Here is the progress so far: the truck is getting some major work completed on the inside and outside. It has caused some delays and it looks like closer to June as my start. In the meantime, we are taking a trip to Korea to immerse ourselves in the food, flavors and culture. I’ll be posting a lot on our trip to share things especially the influence I take in to bring back to share via the truck. I’m so excited. Stay tuned!
