Trout Lake, WA
Join us for a weekend of white water rafting!! Oh, and lava tubes, wine country, late-summer farm dinners, cave spelunking, and relaxing at the base of Mount Adams. We have rented out a whole farm in Trout Lake, WA with a large lodge and four adjacent glamping tents for a comfortable two-night stay. The farm is equiped with a outdoor bath house, a hot tub, fresh produce, an outdoor kitchen, and many places for fun lawn games. We will be located 11 miles from the whitewater rafting put-in along the White Salmon River. We’ll enjoy a 4 hour rafting experience.

This trip is in the beautiful Hood River/White Salmon area with incredible views of Mt. Adams, Mt. Hood, the Multnomah Falls, the Columbia River, and the White Salmon River. Join our three-day adventure and stay for a few more days to explore on your own! Our guides will hook you up with all the local hot spots.

This trip is all-inclusive and one of a kind. Celebrate summer with a private chef, a private guide, a private raft, and a private glamping tent/lodge room. You’re worth it!

Just picked up some gorgeous halibut for our Lummi Island Crab Adventure this weekend. The first night is a welcome dinner full of seasonal deliciousness at our island lodge and the second night is a crab feast on the beach thanks to the amazing (our Lummi trip advisor!)

Here is a halibut tartare with gems, citrus dressing, green coriander, and nasturtium. We’ll be serving the rest tomorrow night at our sold out weekend roasted with lemon brown butter, chanterelles, and roasted early tomatoes. Summer is here!

We cook a lotttttttt of vegetables for our dinners. We have so many fabulous farms in the area, it’s hard not too. Surprisingly, however, our grilled chicken inevitably gets the most praise at the table. Some folks think chicken is a boring option when they read it on a restaurant menu, but I very much disagree. A perfectly cooked chicken is a thing of beauty.

We salt our butchered birds overnight uncovered to dry out the skin. The tender breasts are left on the bone to help buffer the heat. We either lightly smoke them before roasting, or grill them on our grill. The breasts never go over 150 and the legs go to 165 or so. The breast meat rests for as long as we can before carving and the results are a perfectly seasoned, juicy, smokey birds. They don’t really need much else, but I did just serve them with spiced yogurt, charred zucchini, and saffron butter, so….

We added a second date because our first one sold out so quickly! Our Poo Poo Point event is a guided strenuous hike up to a mountain top dinner! Paraglide off after dinner if you wish, or just watch fliers take off from the table.

We cook a lot of fish over the course of a Windward summer. Washington state and our Alaskan neighbors have some of the most beautiful salmon. It took time to get to know each different type, how it cooked best, and the ecological impact of serving such a beautiful and wild species. I struggle now to put king salmon on a menu, considering how important they are to the balance of our ocean-dwelling ecosystem. We cook sockeye gently, coho whole on the grill with boosting flavors, and keta with all the chef tricks we have (a little smoke?! Definitely brown butter). We just served up some perfect sous vide sockeye last night. Seasoned with only salt and olive oil, adding nothing to interfere with it’s almost cucumber like freshness.

This post isn’t really looking to sell anything. It’s more just a love note to salmon. Dang. I missed em. Ok fine, I’ll sell something. I’m doing a fundraiser brunch this Sunday. All profits go to World Central Kitchen. There are still tickets and you can find them in our bio. No salmon, but smoked cod. Gosh, don’t get me started on cod!

All profits will be donated to World Central Kitchen- - who is providing meals and humanitarian aid to those in need in Palestine, Ukraine, and many other countries around the world. WCK chefs enter extremely dangerous conditions to ensure that the most vulnerable are fed and nourished. Brunch tickets are $70 a person for three-courses. Please note we can only offer very minor dietary adjustments.

Once you have secured your tickets, our team will contact you to take your pre-order. This will allow us to minimize potential food waste in solidarity with our chefs at WCK.

Happy to announce that our 2024 EVENTS ARE LIVE! These events take about three months to come alive and when I finalize each one and input it to the website, I can’t help but feel a little teary eyed. These events distill all the beauty I see in this life: good food, new friends, challenging adventures, and great exploration. I hope that you will join us, or at least recommend us to your friends.

I’d also like to introduce Liz Pachaud, , who we are lucky enough to have signed on as our resident guide. Liz might be the most inspiring human I have ever met. Her credentials are enormous, but just to give you a taste, she’s currently taking lessons for her helicopter pilots license TO RESCUE our du*****es when we get stranded on a snowy mountain! Liz is the best, a fully-certified guide, and will run our Camp Muir treks, all of our Intro to Backpacking courses, and beyond. This party-hardy chef can’t wait for some reasonable structure to float into this lawless enterprise.
