From Amazon to Cocktail Bar Owner in Less than Two Months!
Kim Beecroft, a lifelong creative professional, parted ways with Amazon after 10 years to set upon her path to find and open a cocktail bar. As luck would have it, the previous owners of The Saloon, one of her favorite bars in the Mt Baker neighborhood, had just been put it up for sale. Things happened fast and within two months, she took over the bar. Kim, with the help of her fiancé, Sofia, quickly turned it into a decadent lounge. In April 2019, the name was officially updated to The Velvet Elk, to reflect the new vibe of the bar and was inspired by the one of the original black velvet paintings that still hangs in the front of the bar.
The Velvet Elk, formerly The Saloon, is a lush, sumptuously-decorated lounge that could easily have come from another era. Filled with collectible vintage furniture and velvet paintings, the staff serve up craft cocktails in crystal glasses. “When people are in here, there is no Seattle freeze. They put down their phones and actually talk to each other,” says Kim, whose mission was to create an inclusive and non-pretentious cocktail bar. “While a lot of bars often take on a more masculine energy, I wanted this cocktail bar to hold an equally feminine vibe. A space that is a throwback to another time, but with a modern twist.”
